Peaches and Cream Pancakes

I refuse to believe Summer is coming to an end.

The only thing that’s comforting to me right now is the thought of early Fall.  Otherwise known as “the most perfect time of year.”

But until then, I’m hanging onto Summer like Hurricane Irene is about to take out Colorado tomorrow.

And nothing says Summer like fresh Colorado peaches.

Creamy.

I’ve had some good pancake combos in the past, but these were the best. 

And I wouldn’t lie to you about a serious thing like pancakes.

Peaches and Cream Pancakes:

Serves 1.

Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • dash salt
  • 1/2 banana, cut into slices
  • 1/2 peach, cut into chunks
  • 1/2 cup almond milk
  • 1 tablespoon Bailey’s Irish Cream
  • Optional: toppings like maple syrup, nut butter thinned with almond milk, granola

Method:

  • In a bowl, mix flour, baking powder, cinnamon and salt.
  • Add banana, peaches, milk and cream and mix till smooth. 
  • Heat a pan and spray with non-stick spray.
  • Pour pancakes and cook till you can flip, then cook on the other side.

*You may need to add more milk to thin the batter out.

**Batter is safe to eat because it’s egg-free!

***Raw batter consumption also means your consuming alcohol.  I’m okay with it, if you are.

These turn out a gorgeous golden color.

The peaches are delectable.

Sweet, fruity, decadent, filling, delicious.

I topped mine with some chocolate hazelnut butter I thinned with almond milk, then microwaved, plus a drizzle of maple syrup and a spoonful of granola.

Saturday Snapshots

You know what rocks?

Having Saturday off from work for the first time in 3 months.  Plus I already had Friday off.  Is this real life?

It was truly awesome to have a carefree Friday full of yoga, family and good food. 

Like these pancakes.

Hands down the best pancake recipe I’ve come up with so far.

Obviously it involved Bailey’s Irish Cream.   

Fact #1: Having alcohol for breakfast is a sign of alcoholism.

Fact #2: It doesn’t count as alcohol if all the alcohol has been cooked out.

I promise to share the recipe this week.  And you’ll want it.

It also involved this smoothie.  Which, for you information, I had every single day this week.

Is it just me or does this picture look like it’s upside down, even though it’s a bowl and there’s not right side to be up?  

And…

I ate a burger.   A real burger.  For the first time in 2 years.

Back in the day I used to love burgers.  Until they started making me instantly sick after eating them and I’ve been scared to try one ever since.  But I decided to face my fears.

The good news is I didn’t get sick.

The bad news is I wasn’t as in love with this burger as I thought I would be considering how much I used to like them.

I preferred the company to the food, actually.  My family was a blast 🙂

On Saturday I decided to bust out my 9 mile run.  Hoo-rah!

Joey may have injured himself so he took it easy this week and biked next to me while I ran and skipped his run.

I’m not going to lie, it was nice having someone ride in front of me to part the seas.  VIP running.

And there happened to be a race going on at the same time so there were lots of friendly people out and other runners cheering me on because they thought I was in the race!  If only people were always cheering me on during training runs.

Now I can do my 10K next weekend, which will be much easier to fit in before I have to work.

Afterwards, Joey conned me into not showering and going straight to the Famers’ Market.  Gross, right?

What’s gross is the “Tofu Ninja” dish I got while we were there.

Full of red onions, bland tofu and a watery yogurt sauce.  Bleh!  It’s dishes like these that make people think tofu is gross.

But we did manage to get eggplant, okra, fresh corn tortillas, peaches and a giant bag of basil.  Score!

And we scored this great new iPhone app.

Then we hit up the pool. 

It.was.hot.  It’s crazy to think there’s a hurricane going on on the other side of the country when the weather here is perfectly normal.  If being 97* in late August is normal…

Then of course there was leftover BBQ chickpea pizza and frozen yogurt.  Can you say obsessed?

Solo Date Night

Whew, yesterday I felt like a real grown-up with a 9-5 job!  I ran before work and had all evening to myself.

I love Joey and all, I really do, but I was kinda sorta glad his bowling league started up last night because I was cooking dinner for my hot date and needed him gone.

And before you think I’ve gone all Unfaithful on you, that hot date was myself.

P.S. I’ve never seen Unfaithful, but judging from the title, I think I can guess what it’s about.

I pulled out all the stops for my date.

Classy and expensive appetizers.

My date was dressed to the nines.

And no outfit is complete without onion goggles.

And because my date was feeling extra hungry yesterday, I pulled out the serious stuff.

While goat cheese is probably my favorite, muenster will always hold a special place in my heart.

It makes me think of my mom and how she would melt slices of it in the microwave for my sister and I when we were little.  And how I always thought the orange end pieces tasted the best.

Oh wait, I still think that.

My date likes pizza.  And BBQ sauce.  And isn’t so big on chicken, but chickpeas are a whole different story.

Plus opening a can of beans seems so much easier than trying to cook chicken.

I know I’ve said this before but, I love pizza.

And this one was so.freaking.good. 

And easy. 

Seriously, all I did was pre-bake the crust, spread some BBQ sauce on, then cheese, chickpeas and some onions I’d caramelized on the stove.

Delicious.

Then Joey came home.  But I didn’t mind.  I missed watching Jersey Shore with him.
