Chocolate Crinkle Cookies

Do you know what chocolate crinkle cookies are?

This is such a familiar looking cookie, but until Wednesday, I’d never made one.

And I had no idea how you made that fancy powdered sugar design.

Turns out, it just involves rolling your dough in the sugar before you bake them.

I wasn’t really prepared for anything that easy.

These cookies have a fairly short and simple ingredient list.  In fact, you probably have everything you need for these on hand, but I will warn you that they have to chill in the fridge for 2 hours or overnight, so plan accordingly. 

Also, plan to be out of the house while they chill, as repeatedly opening the fridge to cookie dough can be both tempting and torturous. 

I used this recipe and would highly recommend it.

This is the part where I beg you not to use a whisk to mix the wet and dry together.

Unless, of course, you enjoy struggling to get a giant sticky clump of dough out of a whisk for 10 minutes.

Actually, the one thing I will say about these cookies is that the dough is STICKY.  Really sticky.  Even my spoonula had a hard time, but together we prevailed.

IMG_3545 Wrap in plastic wrap and chill.

Whether I’m telling you or the dough to chill is up for debate.

Then, all that’s left to do is roll, roll again, and bake.

Truth be told, I’m not a huge chocolate cookie person, so I didn’t expect much from these cookies, but they really wowed me.  They’re soft, fudgy and not too sweet, thanks to the cocoa powder, which really balances out the powdered sugar.

And in case you need any more convincing, I made these on Wednesday and today they’re gone.  And I swear I didn’t finish them by myself.

Technically, today’s cookie is a vegan one.

But I would just tell you it’s a chocolate peanut butter cookie.

And my mom would tell you it’s “SO GOOD!”  Actually her eyes, as she took a bite, would tell you that, but she would confirm it in words afterwards.

She’s right.  They’re incredible.  So let’s not get hung up on technicalities, okay?

Vegan cookies can be temperamental.  Sometimes they’re flat, sometimes they burn and sometimes they taste like they’re missing something.  Like butter.

These are none of the above. 

They’re easy.

And they’re not for the faint of heart.

And the only butter they need is of the peanut variety.

I’d like to eat about 12 of these, which is convenient because that’s exactly how many I made.

Too bad I already gave one away to my mom.

WIAW: Say I’m Not the Only One

FYI I haven’t frozen to death yet in the arctic tundra known as Colorado.  I know you were worried.

But I do plan on doing everything in my power to stay indoors as much as possible.  I’ve got a fridge loaded with soup and stew to help me with that goal.

And cookies.  Lots and lots of cookies.

Anyways, this week’s What I Ate Wednesday post has a theme.  And it’s not “cookies for every meal,” although I might not mind that.

Please tell me I’m not the only one…

Who always has half a banana in the fridge.

Not because I can’t finish a whole banana, but because I need to conserve bananas.  Duh.

This morning’s half served as a good pre at-home-yoga snack.

Who has to have a morning mug of tea.

And who has to keep their honey bear upside down, apparently.

Who thinks chocolate is a breakfast food and chocolate chip mint pancakes are the best vehicle to get said chocolate to your mouth.

Who isn’t a fan of the eggnog latte.

I made myself a short and two sips in, I realized I just wanted a plain cup of steamed eggnog.

My mom is probably disowning me as she reads this.

Who thinks shoveling soup in their mouth during their 10-minute break is attractive.

Who thinks nothing beats a classic snack of an apple and peanut butter.

Who thinks soup for lunch and stew for dinner makes for an awesome, warm and comforting day.

For the record, I have no idea what tamarind is, so there’s none of it in this stew.  Oopsies.

And who thinks one cookie doesn’t really do the trick.
