WIAW Other Than Cookies

December 14, 2011

By now, with all the cookies I’ve been posting, you’re probably all assuming I’ve gone off the deep end and have been crumbling them over everything I eat. Or you now, just plain eating cookies for every meal.

I swear I’m not.

And what better way to prove it to you than with a WIAW post?

Breakfast:

Multigrain bagel half, peanut butter, banana, dried fruit mix & “Nog-Spiked Nut Butter Sauce”

I swear that nut butter recipe is coming!

No December morning is complete without some Sugar Cookie Sleigh Ride.

Lunch:
201112140909.jpg
Pumpkin Mac and Cheese.
“Cheezey” Kale
Brussel sprouts. <— I promise they’re in there somewhere.

Guys, it’s official. Mac and cheese is my favorite food. And this pumpkin version is amazing! Good thing the recipe makes an entire 9 x 13 in. pan-full.
Totally satisfying lunch, even if it was at work.
Snack:

Heaping handful (or two) or almonds.

Dinner:

Chili Verde via Giada de Laurentis

I love finding new styles of chili. This one was really good, although Joey said he would have liked it to have more heat.
Who knew hominy was so good? Or even knew what hominy was. I’m glad I explained it to Joey before he left for the store.
The night was concluded with some holiday episodes of Glee and The New Girl. Let’s just say I was more than excited to see a performance by Rory and that The New Girl had Joey and I in hysterics, per usual. Then we popped in my very favorite Christmas movie, Love Actually (tied with Scrooged, of course), and got some present wrapping done.
Oh and some dessert might have snuck in.
Dessert:

Hot chocolate and a Gingerbread man.

Don’t worry, that post is coming, too!

I’m not eating cookies for every meal, but they have to find their way in at some point during the day 🙂
Happy Wednesday and as always, thanks to Jenn of Peas and Crayons for hosting the WIAW party!

Caramel Apple Cider Cookies

December 13, 2011

Joey is a caramel lover.

If peanut butter is my vice, caramel is Joey’s.  That and ice cream.  And Chipotle.  But I’m getting ahead of myself.

When I was searching Foodgawker for recipes for my 12 Days of Cookies challenge, I came across a picture of gooey caramel melting out of a cookie and immediately pinned it.  Even if I’m not a huge caramel fan, I aim to please.  I know, I know, I’m a regular old martyr.

Caramel Apple Cider Cookies

Recipe found here.

When I tried to explain to Joey what kind of caramel I needed from the store, he politely told me that he knew exactly what I needed and didn’t need any clarifications.

The man knows his caramel, apparently.

IMG_3582

It took a while for the dough to come together, but it finally did.

IMG_3584

IMG_3586

We’re all pros at stuffing cookies after those chocolate peanut butter pillows, right?

No?  I’ll give you a play by play.

IMG_3587

Hint: unwrap your candies before you get your hands all sticky in the dough.

IMG_3588 Grab a small chunk of dough.

IMG_3589Flatten in out on a non-stick surface.

I used my rubber baking sheet.

IMG_3590Place your caramel in the center of the dough.

IMG_3591

IMG_3592Wrap the sides of the dough around the caramel.

IMG_3593

IMG_3594Don’t worry if the dough starts to break in places, we’ll fix that in a second.

IMG_3596Roll the dough between your hands to form a smooth ball.

Et voila!

Bake on 350 degrees for 11-14 minutes.

IMG_3598

IMG_3599 Then let them cool upside down, so the hot caramel doesn’t ooze out.  If caramel is oozing anywhere, it should  in your mouth.

IMG_3597

This might happen, while you’re trying to make cookies and lunch at the same time.

IMG_3603

But in the end, you’ll have this and it will be worth a singed oven mitt.

Not going to lie, these are really sweet!  One is more than enough to get your sugar kick for the day.

Good thing you have a boyfriend with a caramel infatuation and a sweet tooth, right?

What I Instagramed This Weekend

December 12, 2011

My solution to crappy lighting is to instagram everything. Which isn’t entirely realistic considering I don’t have a smartphone of any sort. But I think Joey is getting used to me commandeering his iPhone and referring to it as “mine.”

Anyways, this weekend was such a good one, filled with holiday festivities galore. Now, that’s my kind of weekend! Let’s take a look at what I instagramed, shall we?

Friday afternoon surprise = a package from Shanna of Shanna Like Banana.

Full of eggnogy goodies and tea!

She knows me too well.
I may or may not be eating one of those cookies crumbled over oatmeal as we speak…

Friday night dinner = Hapa Sushi

We tried to get in at The Med, but a 2-hour wait doesn’t really work for me. We went to Hapa instead and got sat right away, plus we hadn’t been to what used to be one our favorite restaurants in probably a year! The horror. My sushi craving is officially satisfied.

Friday night entertainment = “a live radio play” version of It’s a Wonderful Life, put on by the Colorado Shakespeare Festival.

I had reservations about seeing a radio play, but the CSF actors are always so great, I figured this would be good too. Although not as exciting as watching them act things out, I thought it was so cool to see them make all the sound effects and use different voices for different characters.

201112120916.jpg

Saturday involved shopping in new boots.

201112120926.jpg

Lunch at Mod Market.

LOVE Mod Market.

201112120928.jpg

Curried Split Pea Soup + Edamame Hummus Sandwich.

And Sunday was all about Gingerbread Men.

201112120930.jpg

201112120930.jpg

Man down!

Oh and the last exciting purchase on Saturday was an early Christmas present to ourselves… a new laptop! And not just any laptop, a MacBook Pro!

201112120938.jpg

We’ve been saving since my laptop stopped working at the beginning of the year, so we’re pretty excited and Joey’s been wanting to go Mac for a while. It’s been quite the learning experience so far and now I know how my dad feels when he calls and asks me things like “how do I save something?” or “where did my document go after I saved it?”

And I’m not going to lie, I’m really missing Windows Live Writer right now. I’m currently using Ecto, but it’s just not the same. Anyone with a Mac who can recommend a good free blog writing service?

Happy Monday!

What was the most exciting part of your weekend?

Sushi, yay or nay?

Have you ever made Gingerbread Men from scratch??
