WIAW Other Than Cookies
By now, with all the cookies I’ve been posting, you’re probably all assuming I’ve gone off the deep end and have been crumbling them over everything I eat. Or you now, just plain eating cookies for every meal.
I swear I’m not.
And what better way to prove it to you than with a WIAW post?
Caramel Apple Cider Cookies
Joey is a caramel lover.
If peanut butter is my vice, caramel is Joey’s. That and ice cream. And Chipotle. But I’m getting ahead of myself.
When I was searching Foodgawker for recipes for my 12 Days of Cookies challenge, I came across a picture of gooey caramel melting out of a cookie and immediately pinned it. Even if I’m not a huge caramel fan, I aim to please. I know, I know, I’m a regular old martyr.

When I tried to explain to Joey what kind of caramel I needed from the store, he politely told me that he knew exactly what I needed and didn’t need any clarifications.
The man knows his caramel, apparently.
It took a while for the dough to come together, but it finally did.
We’re all pros at stuffing cookies after those chocolate peanut butter pillows, right?
No? I’ll give you a play by play.
Hint: unwrap your candies before you get your hands all sticky in the dough.
Flatten in out on a non-stick surface.
I used my rubber baking sheet.
Place your caramel in the center of the dough.
Wrap the sides of the dough around the caramel.
Don’t worry if the dough starts to break in places, we’ll fix that in a second.
Roll the dough between your hands to form a smooth ball.
Et voila!
Bake on 350 degrees for 11-14 minutes.
Then let them cool upside down, so the hot caramel doesn’t ooze out. If caramel is oozing anywhere, it should in your mouth.
This might happen, while you’re trying to make cookies and lunch at the same time.
But in the end, you’ll have this and it will be worth a singed oven mitt.
Not going to lie, these are really sweet! One is more than enough to get your sugar kick for the day.
Good thing you have a boyfriend with a caramel infatuation and a sweet tooth, right?

What I Instagramed This Weekend
My solution to crappy lighting is to instagram everything. Which isn’t entirely realistic considering I don’t have a smartphone of any sort. But I think Joey is getting used to me commandeering his iPhone and referring to it as “mine.”
Anyways, this weekend was such a good one, filled with holiday festivities galore. Now, that’s my kind of weekend! Let’s take a look at what I instagramed, shall we?
Friday afternoon surprise = a package from Shanna of Shanna Like Banana.
Full of eggnogy goodies and tea!
Friday night dinner = Hapa Sushi
We tried to get in at The Med, but a 2-hour wait doesn’t really work for me. We went to Hapa instead and got sat right away, plus we hadn’t been to what used to be one our favorite restaurants in probably a year! The horror. My sushi craving is officially satisfied.



Friday night entertainment = “a live radio play” version of It’s a Wonderful Life, put on by the Colorado Shakespeare Festival.
I had reservations about seeing a radio play, but the CSF actors are always so great, I figured this would be good too. Although not as exciting as watching them act things out, I thought it was so cool to see them make all the sound effects and use different voices for different characters.
Saturday involved shopping in new boots.
Lunch at Mod Market.
LOVE Mod Market.
Curried Split Pea Soup + Edamame Hummus Sandwich.
And Sunday was all about Gingerbread Men.

Man down!
Oh and the last exciting purchase on Saturday was an early Christmas present to ourselves… a new laptop! And not just any laptop, a MacBook Pro!

We’ve been saving since my laptop stopped working at the beginning of the year, so we’re pretty excited and Joey’s been wanting to go Mac for a while. It’s been quite the learning experience so far and now I know how my dad feels when he calls and asks me things like “how do I save something?” or “where did my document go after I saved it?”
And I’m not going to lie, I’m really missing Windows Live Writer right now. I’m currently using Ecto, but it’s just not the same. Anyone with a Mac who can recommend a good free blog writing service?
