Yesterday started out marvelous! I woke up on time to get ready for work and make myself a breakfast that is for sure a keeper!
This was kind of an omelete…It came together more like an egg taco, if there is such a thing! The ingridients inside are sausage, onion, red bell pepper and sour cream. Pretty simple to make and tasted fantastic. Oh and a wonderful glass of medium pulp OJ!
Later in the afternoon my tenants called me and told me a sprinkler head broke. A 20 min fix ended up being 4 HOURS AHHH. So I wasn’t able to cook dinner 😦 So i had to “settle” for Chipotle.
Let me tell you a little something about this place. I could eat this everyday no joke. In high school mon-fri myself and 4 friends used to go every single day, I’m not exaggerating and I never got sick of it.

My burrito is rice, pico-de-gallo, corn salsa, LOTS of cheese and LOTS of sour cream (I know load up on the unhealthy stuff)

Grape-a-licous
Good morning! Day 2 of my adventure in blog land.
Started out today with my favorite breakfast that I have not had in months and man was I missing out!
Yes it is VERY simple but that is way it’s a fav! A couple pieces of toasted bread covered in mayo (I LOVE MAYO) and 2 eggs salt & peppered to taste. YUMMY!!
Another great find I would like to talk about is the Hummus I had for my snack today and the best part is it’s organic 🙂 The flavor that is by far the best is Sweet Roasted Red Peppers. I dipped with some pretzel sticks, great combo. Whenever I eat pretzels all that runs through my head is “These pretzels are making me thirsty” from Seinfeld.
On to dinner…Grilled Chicken w/ Fresh Grape Glaze and a fruit bowl. The recipe is stolen from Cooking Light again.
Started off by making the grape glaze. Even though this picture was inside this is actually what it looked like. I know does not look appetizing. Blended some grapes while cooking onions and garlic then combined with fresh rosemary, soy sauce, balsamic vinegar and brown sugar. I then re-blended after the mixture thickened up and it turned out a dark purple.
Cooked on the stove top for 25 min basting and turning constantly and let me tell you this was the first time that the chicken was actually fully cooked in time!
This dish was platted for the vacationer that I so do miss! (Put the chicken in a L) When I was reading the reviews for this dish I was scared to try it but the glaze turned out AMAZING I got a little bit of the rosemary taste and a good amount of the grapes and I LOVE GRAPES!!
Before dinner I ran 6 miles and my splits were pretty exciting but I was DEAD at the end.

Hello Blogging World
As many of you know Lauren is on vaca AGAIN! Since she is gone I (Joey, her bf) am going to take over her blog for a week. When I volunteered I was really excited then saw a couple comments and started to get more and more nervous but here I am!
Normally I make a batch of burritos for breakfast but I decided since I’m blogging that I should be a little creative.
1 – Tortilla topped with 2 eggs cooked over medium with melted cheddar cheese and my favorite canned chile. It was quite delicious!!
After work I headed to the grocery store and loaded up my cart with goodies for the week that I can’t wait to share with all of you.
For dinner I decided to splurge a little bit and make myself Lobster Rolls with leftover millet.
As you can see I used Lobster claws for the meat and they were very good. I was very amused that when I pulled the meat out of the claw that it stayed the same shape as the top claw 🙂
The mixture was 1.5 T Mayo, 1/16 cup Chopped Celery, 3/4T Onion, 1/2 T Plain Greek Yogurt, Salt and Ground Red Pepper and the lobster! If I was to do it again I’d probably throw in some more mayo and more red pepper.
After toasting the buns I put a piece of bibb lettuce and the lobster mixture to make a beautiful sandy!
Sorry for the lighting, it was dark outside by the time I ate because I had to run 5 miles today for my Marathon training!
