I knew ahead of time that yesterday was bound to be a good day. Why, you ask? Well it all started when I was forcing suggesting that Joey use of the last of the peanut butter on his sandwich on Tuesday night. I think you know where this is going…

After class I ventured to the FM all by my lonesome 😦 to pick up something for dinner since I had to work from 5 to 9.
Mod Market Salad per usual
An addition to this “Market Salad” which came with greens, cucumbers, corn, strawberries, feta and a balsamic dressing I got a big smoothie to quench my thirst.
On the way back to campus I watched a skateboarded fly down the hill then fly off his board, roll on the ground and scrape his face on the cement!! OUCH. He was missing a piece of his eyebrow but he assured me he was okay…
Anyways, back to the smoothie 🙂 Banana, strawberries and apple juice — so thirst quenching, it totally hit the spot.

Get used to it

Don’t complain, being at work by 7 AM is hard work!! Atleast I can change up the toppings
Vegan Overnight Oats are such an easy make-ahead-of-time breakfast (well you have to make them ahead…) and they’re portable to boot.
Anyone have any bring to work breakfast ideas??
Get used to seeing sack lunches ALL THE TIME. I know, I don’t like it any more than you do but at least I’ll have a nice Boulder backdrop 🙂
By the way, I signed up for a race this coming Saturday!! This week in half marathon world is a step back week which means my Sunday long run has been reduced to a 5K race. Joey found a race for us to do but after getting me all excited he remembered he has a fantasy football draft 😦 What is it with this football thing?? he he
I roped Jenn into signing up with me instead (I like running with her better anyways, shhh don’t tell Joey!)
The Details:
2010 Skirt Chaser 5K: Girls get a 3 mintue head start and the guys have to try to catch up! Fun huh? It’s a night race (5 PM) which we’re both very excited about and a block party afterwards with free food, yes please!
Dinner was on the fly and no, I don’t have much practice or success when it comes to making dinner up on my own. Hence tonight’s semi-flop of a meal.
- Polenta
- 1 can Great Northern Beans
- 1 can diced tomatoes
- cumin
- paprika
- salt & pepper
- oregano
- cilantro
- sour cream
- tortilla chips
In theory this was a good meal and it even looks pretty darn good. I promise there’s polenta under there somewhere!
UNFORTUNATLEY, this was pretty bland. I blame the no salt added canned ingredients — I NEED my salt people! The sour cream ALMOST saved the dish. Helllooooo creamy tangy sour cream, I need more of you in my life.
Obviously Joey and I still finished our bowls like it was some sort of masterpiece.
One thing not to get used to: the lack of photos in this post!!
I got caught up in the first day of school madness but I’ll be better in the future, I promise!

Going to the Chapel
Okay, so it didn’t take place in a chapel, but it sure was beautiful 🙂
My brother and SIL (sister-in-law), Nikki, got married last year but waited til this year to have a formal ceremony. Nikki’s dad is a tribal elder so they decided to have a traditional Native American wedding ceremony. I was way excited to see this!
We got into the wedding mood like any other couple might do
By eating yogurt and practicing our “Elaine Dance”
G can rock a mohawk better than anyone I know
I loved how unique the ceremony was (and the fact that they got to eat strawberries during — I want a snack break during my ceremony too!!)
The fun continued
G managed to escape all adult supervision and stick his hand into the cake, classic!
In other, more boring, news I’ve fallen head over heels for the creamy, fluffy, sweet deliciousness that is Scottish oats
These were about to overflow right off the plate and it was only a 1/3 cup portion!
I made these with 3/4 cup water and 1/3 cup vanilla almond milk. I need to make them plain, I have a sneaking suspicion they have a natural sweet taste all on their own.
Still chowing down on my daily peach, even if it means bringing them to work
Eating at work is my life. FYI, this is the rest of that millet concoction I’ve been drooling over!
I may or may not have brought the entire container of hummus to work with me, don’t judge!
ALERT: Cheeseless pizza may be my new favorite meal
WF multigrain pizza dough, tomato sauce (I mixed oregano, crushed red pepper flakes, thyme, salt and pepper into the sauce), tomaotes (from yellow to red to orange and big to small!), fresh basil.
OH.YES.
So this is love, mmmm mmmm mmmmm mmmm. For a tomato flavor lover like me the absense of cheese on a pizza is NO BIG DEAL
Joey is unable to part with his beloved cheese, however
How do you eat your pizza?
I’m off to conquer a 6 mile run. Prepare for total domination (Bring It On anyone?). Happy Day Before the Semester Starts 🙂
