Get used to it

because you’ll be seeing this a lot on Monday mornings

Don’t complain, being at work by 7 AM is hard work!!  Atleast I can change up the toppings

Vegan Overnight Oats are such an easy make-ahead-of-time breakfast (well you have to make them ahead…) and  they’re portable to boot.

Anyone have any bring to work breakfast ideas??

Get used to seeing sack lunches ALL THE TIME.  I know, I don’t like it any more than you do but at least I’ll have a nice Boulder backdrop 🙂

By the way, I signed up for a race this coming Saturday!!  This week in half marathon world is a step back week which means my Sunday long run has been reduced to a 5K race.  Joey found a race for us to do but after getting me all excited he remembered he has a fantasy football draft 😦  What is it with this football thing?? he he

I roped Jenn into signing up with me instead (I like running with her better anyways, shhh don’t tell Joey!)

The Details:

2010 Skirt Chaser 5K: Girls get a 3 mintue head start and the guys have to try to catch up!  Fun huh?  It’s a night race (5 PM) which we’re both very excited about and a block party afterwards with free food, yes please!

Dinner was on the fly and no, I don’t have much practice or success when it comes to making dinner up on my own.  Hence tonight’s semi-flop of a meal.

  • Polenta
  • 1 can Great Northern Beans
  • 1 can diced tomatoes
  • cumin
  • paprika
  • salt & pepper
  • oregano
  • cilantro
  • sour cream
  • tortilla chips

In theory this was a good meal and it even looks pretty darn good.  I promise there’s polenta under there somewhere!

See, I told you.

UNFORTUNATLEY, this was pretty bland.  I blame the no salt added canned ingredients — I NEED my salt people!  The sour cream ALMOST saved the dish.  Helllooooo creamy tangy sour cream, I need more of you in my life.  

Obviously Joey and I still finished our bowls like it was some sort of masterpiece.

One thing not to get used to: the lack of photos in this post!!

I got caught up in the first day of school madness but I’ll be better in the future, I promise!

    Yep, I bring my breakfast, lunch, and snacks all to work.

    Other breakfast ideas: cottage cheese and cut up fruit (like cantaloupe); instant oatmeal (don’t hate); PB english muffin

      Packing food is the way to go! Oooh cottage cheese and strawberries is one of my favorite things but I haven’t had it in so long, good thinking

    Sometimes I bring green smoothies with me to work in the mornings 🙂

        Haha, YES! Or people ask you what you’re drinking but then make a face when you say there’s spinach in it…. it’s not quite as bad here in Boulder.

    Hardboiled eggs are easy to bring places. But sometimes I feel self conscious chompin on whole eggs when other people can see. Haha, I really don’t know why though. Oats seem better for an audience!

      Ha ha no shame Hayley, I think that’s awesome!! I bet I would get some weird looks if I had eaten this mornings breakfast (oats in a jar) in public!
