Race Recap: Skirt Chaser
We made it to the start line with minutes to spare for our first ever Skirt Chaser 5K! They herded us all backwards through what turned out to be the start and finish line — so being one of the last ones through made up one of the first to start the race, eek!!
Starting off fast KILLS me so I knew I would run into trouble further into the race when I looked down and saw we had an 8:30 pace in the first mile. That’s WAYYY too fast for me! Our fast pace + the blazing sun + a mostly uphill course really took a toll on me. I was struggling, to say the least and my mouth was so dry 😦
Not my ideal version of a race BUT I had great company 🙂 and we finished 3 minutes faster than I finished my first 5K! Total time = 29:38 (9:32 pace) — I’m very proud of this!
Pre-Race Fuel:
My last Ezekial wrap microwaved for 30 seconds then smeared with PB and banana + carrot and hummus on the side
Perfect fuel for a run if you ask me!
Post-race Fuel came in the form of free Chipotle — feel free to be jealous. I got the vegetarian. It came with cheese which I usually don’t get but it tasted so so good!
Sunday was one of those lay around all morning kind of days 🙂 sometimes we all need one of these!
Dinner = Black Bean Burgers
I think it’s pretty hard to mess up a black bean burger so we just kinda tossed in whatever we wanted, including pepitas. I’m still boycotting my food processor so we mashed the beans with a fork and kept the seeds whole. Loved the crunchy element!
We also tossed in some whole wheat flour, BBQ sauce, cayenne pepper, black pepper, salt and paprika
Popped these in the oven on 350* for 20 minutes on each side and voila — topped with mustard, tomato and pickles. I thought the pickle made this burger!
And because no burger is complete without corn on the cob on the side
The corn was PERFECT
Did you notice that the lighting is excellent in these pictures? That’s because we ate at 6, a whole 2 hours before we usually eat dinner. Why? So we could have time to digest before our night run!
I did something I’ve NEVER, I repeat NEVER done before… ran 7 miles! And not just that but I ran 7 miles without having to walk. Sure, my feet are not happy to be so blistered today but it was worth it. I NEEDED a really good run so badly and I finally got one!
I’ll get back to you on the mile splits but I think we figured we did about a 10 minute pace on average. I came home and crashed into bed. Nothing like a nice long run to put you right to sleep 🙂

That would be “Oats in a Peach Jam Jar” but it kind of looks like some kind of confusing chemistry formula… I never was good at science.
I am, however, good at fitting fluffy Scottish oats into tiny jars like such

This was such a good way to start a Friday morning, EXCEPT that it was the sad end of my Justin’s Chocolate Hazlenut butter. Must get more ASAP!
I took my chances on finding something for lunch on campus and came across a salad bar with organic greens and grilled tofu, yes please!
Did I mention I’m taking a class called Religion and Dance? Well I am and was all too excited to find out that instead of being subjected to lecture 3x a week, we’re subjected 2x a week and the third day involves actual dancing. BINGO! These are the kinds of classes senior year should involve 🙂
So after lunch I trudged on over to the Carlson Gym and participated in some Rueda de Casino, which goes a little something like this.
In all reality, my class looked nothing like those pros but I had fun anyways!
Packet pick up for TODAYS 5K race was at a store in Denver, as was last nights Rockies game (obviously) so we decided to head out early so we could grab dinner in between pick up and the game. Depsite being a Colorado native I know close to nothing about the Denver area therefore I trusted Ashley and went to her favorite Denver restaurant, Vine Street Pub.
It was nothing short of FANTASTIC and it all started with a coupe of beers
I meant to order the 8 oz. but forgot and ended up with a 16 oz. oops! I’m not much of a beer drinker so Joey finished mine. I was more into my meal anyways.
Tempeh Reuben = beer baked tempeh, sauerkraut, vegan 1000 Island Dressing, tomato, swiss cheese. It also came with the pub’s famous fries. Apologies for the amount of blur, apparently I could not hold still!
My hands were covered in dressing, tempeh pieces were on my dress, my face was most likely a mess but I didn’t care one bit. When food is this good you forget your manners and just DIG IN. Joey was real jealous of my meal 😛

Feeling the hunger
I set my alarm for 8 last night and was none too happy that I was rudely awoken around 7:30 because someone (cough Joey cough) was blabbing on the phone in the kitchen!! I TRIED to fall back asleep but HAD to get out of bed because I was STARVING. Yes, I’m into capitals today.
Loaded cereal was consumed:
- Crunchy Vanilla Sunrise (has anyone else noticed that I change the name every time? ha ha)
- 1/2 organic banana
- 1/2 organic Colorado peach
- Udi’s Classic Granola
- Vanilla almond milk
HOLD IT. I FORGOT TO MENTION SOMETHING!

1. I HATE having my knees or achilles tendon touched. Blehhhh, it gives me the chills just thinking about it!
2. I’ve gone through my share of pets in my life. Ahem, they are as follows:
- 5 dogs
- 4 cats — two of which were orange tabbys which I cleverly named Sassy and Sassy. I’m creative, I know.
- 4 birds
- Who knows how many hamsters
- 2 Rabbits
- Countless fish
This is making me sound like a bad pet owner…
3. I HAVE to have a glass of water next to me when I go to bed even though I never drink it till the morning
4. I have an Aquaphor addiciton. It’s bad. Note: If you don’t know what Aquaphor is I can no longer associate with you. Kidding, it’s kind of like petroleum jelly but WAY better and I use it as chapstick.
5. I can’t stand the smell of Churros. It makes me feel sick to my stomach!
6. If I could eat one food for the rest of my life it would without a doubt be my mom’s stuffing. It’s my grandma’s recipe and you use this special kind of squash and shrimp. Ahhh, I can’t even describe how good it is!
7. I have NEVER eaten a twinkie, a Big Mac or a Whopper.

Once again I was starving by the time lunch came
I have a new love for tempeh sandwiches. This one had tomatoes, mustard, pepperjack cheese and spinach. Yum!
Two classes and one bus ride later and I was YET AGAIN starving, hence my snack going unpictured. I’ve seen carrots and almond butter combos floating around the blogosphere so I decided to give it a try today.
It was okay. I much prefer carrots with hummus, however.
Hmmm what am I doing with all these browned sesame seeds?

After much moaning, groaning, cussing complaining I ended up with some almost green pesto (I’ll be using spinach instead of basil next time, it works much better as a natural food coloring).
A run was necessary to blow off some food processor annoyance steam.

Have I mentioned that my runs always end up a giant hill that leads into my apartment complex? Well it does. Usually it kicks my butt, sometimes I just end up walking it. Today I showed that hill who was boss, OH YEAH!
Believe it or not for the first time all day I wasn’t starving come meal time. The result was that it was late by the time I ate dinner and therefore daylight was non-existant. As well all know this makes for less than great pictures, sigh 😦 Nevertheless here it is:
Pasta with shrimp and vegan garlic scape pesto (once again compliments of Angela — is she a vegan recipe goddess or what?)
I need to remember these steps for next time:
- Reserve pasta water
- Mix pesto with water to thin it out
- Mix thinned pesto with pasta and shrimp
I was not paying attention and before I knew it I had dumped the water, oops and added the THICK pesto to the pasta which results in a huge clump of pesto that refuses to mix into the pasta, double oops!
Looks like I’ll have to wait till next year to get this right seeing as this was the last of our frozen stash of garlic scapes 😦
