Christmas Leftovers
Christmas may be over but it’s left behind lots of fun toys/food that I can still use.
Did I mention I got a cuisanart?
Oh right, I did. Well I’m still excited about it! You better believe I whipped this out of the box and put it to use shortly after opening it.
Sunday morning I woke up ready to use some of my new presents.
Like tea.
And a tea bag squeezer. This has already made my life a million times better.
Then I got to work on some oats. I wasn’t all that hungry but I needed to try out my new coconut butter and hazelnut butter.
Goodness! I have mixed feelings about coconut but this butter is absolutely delicious!!
Also topped with granola and a few dark chocolate covered cashews, which were a gift from my sister. Love them and her!
I pestered Joey about getting me these C & B spoons for months. I’m slightly excited to eat everything with them.
Apart from the tiny blue spoon, yesterday morning’s breakfast was less exciting. Probably because we were completely out of bananas. Don’t worry, I’ve restocked since.
Topped with peanuts, coconut butter (which is completely melted in the picture) and crumbles of my pumpkin spice muffin from breakfast on Christmas eve.
Christmas has also left behind some food which I’m desperately trying to eat in creative ways.
Okay, so I had this last week and maybe it’s not really creative but I’m pretending it is.
Mixed greens tossed in tahini dressing + stuffing.
Plus leftover sweet potato casserole.
Delicious lunch? Check!
In other non-food related news, Joey and I went on a 4.2 mile run yesterday and although I was moaning and groaning about going Joey assured me I would feel better once we got started and he was right. I needed a good run after a few days without exercising.
And we saw The Nutcracker at the opera house in Denver. Is it just me or is that story really weird? Anyways, we had a great time and there were some really amazing dancers 🙂
A Kitchen Christmas
Hello, friends. I hope you all had wonderful Christmases. I know I did. It was full of laughter, food and family and I feel truly blessed that I had so many wonderful families to share the day with 🙂
It was also a whirlwind of present opening and I got so much good stuff! A large majority of which is kitchen stuff, which I’m SO excited about. I got my very own cuisanart!! Plus an immersion blender, C & B spoons, coconut butter, kitchen shears, tea and so much more. I’m sure you’ll see it all in due time, my friends.
Joey and I woke up at 7:30 to do presents and showers. Joey was up at 5 and kept asking, “Is it time to open presents yet?” Sometimes I can’t remember if he’s 23 or just 5.
He was so sweet and got me a bunch of little kitchen things I wanted plus a beautiful coach purse and even though I begged for no homemade gifts, I’m glad he ignored me because the display he made of our half marathon is AWESOME.
After presents were opened we dashed over to my parents so my sister and I could open presents from them. Joey and I snacked on scones because brunch was still two hours away.
Beanie and I got some great stuff, including these matching coats. I seriously love mine.
My Dad seemed to like his tea bag squeezer.
Then my brother, sister-in-law and nephew came over. They got my sister, my mom and I really cute aprons and a giant cookbook that you’ll be seeing in the future.

More presents were opened and enjoyed.
We bought my nephew, who’s almost 2, some duplos aka big legos, but look who ended up playing with them.
23 or 5, I’m not sure…
Breakfast was eaten.
Giant portions of sweet potato casserole were cooked.
And driven to Joey’s dad’s house where Christmas #2 was enjoyed. I got a Coach gift card and another trip to the outlet is in the works. I have an addiction.
It was such a good afternoon. Joey and I were giggling the whole time 🙂
Around 6, we parted ways and I returned home for dinner, while he went to his mom’s.
Vegetarians beware, huge slabs of meat ahead.
My mom made mashed potatoes with a horseradish butter (it made the potatoes!), her famous stuffing, pork roast and I supplied leftover sweet potato casserole. The empty spot on my plate was reserved for sauteed green beans that were still finishing cooking.
I haven’t been eating much meat lately, but I wanted to try the pork and it was really good so I ate one. Or half anyways — mine was huge!
We ended the night with pie and a movie then I met Joey back at home and spent a while talking and laughing with the roommates. I’m currently lounging in the pajamas Hannah bought me 🙂
Joey and I watched about ten minutes of Willy Wonka and the Chocolate factory on his new blu-ray player then we both crashed.
It was a long day but I loved each and every minute of it. A BIG thanks to everyone who made my Christmas such a special one 🙂
I hope you all had equally amazing days. I’m off to the Nutcracker tonight!!
