Unmotivated
I don’t know if it’s the fact that I eat oatmeal everyday, leftovers almost everyday and eat dinner everyday after it’s dark but I’m feeling very unmotivated in terms of this blog 😦
It actually makes me really sad when I don’t look forward to posting. I’m hoping it’s just a phase but if I stop posting daily, it’s because I’m waiting for inspiration to strike and excitement to overtake me.
That being said, please accept these mehhh breakfast pictures.
If you want breakfast fast, opt for yogurt over oatmeal.
It’s totally mental, but when I see a breakfast that barely fills the same bowl that my normal oatmeal usually fills to the brim I assume it won’t be filling and immediately regret not making oatmeal.
This yogurt-y mess included:
- Plain Greek yogurt
- Maple pumpkin butter
- Honey (which I added before remembering I had maple pumpkin butter but it really only needed one or the other)
- Granola
- Dark chocolate covered cashews
I was so confused with how to eat this mess. Do I mix it? Do I eat it topping by topping? Novice.
I ended up mixing it and then adding a banana (which didn’t make it into any of the pictures).
Oddly enough, this held me over till for a good 3.5 hours. And that 3.5 hours even included a run. Did I mention I attempted a run on Friday and made it 2.5 miles and gave up? I guess the blog isn’t the only place where I haven’t been feeling motivated but I fell back into the running groove, which I attribute to the fact that I was outdoors, had a running buddy and wasn’t running right after waking up or after a day of school/work.
I sure am picky now, aren’t I?
Lunch? Leftovers. Shocking, I know but they were damn good.
Ahh, that pesto pizza was so so good. There was only one piece left and I was super selfish and declared, “I’m eating the pesto piece, that’s all I know!” like the brat that I am.
Of course, the tomato pie was pretty good too. Who says pizza has to have cheese? Okay, me. But no cheese is fun too.
And because I always need a side dish, carrots and cinnamon maple almond butter. Gosh, that stuff is good. I think anything would taste good dipped in it!
We finished Inception and I must say, it was really really good! I feel like I would have to watch it at least 80 more times to catch all the complex details. And I wouldn’t mind watching it 80 more times if I got to stare at Joseph Gordon-Levitt the whole time.
I also made it to yoga <— free class, wa-hoo!

The Stakeout
Sooo, I know I said I’d be back with details about my Dad’s birthday dinner but I was actually really disappointed in my meal and I’d like to forget it as quickly as possible so let’s skip to Saturday’s eats, shall we?
Friday night was full of trivia and this…
Yes, beer pong on a flat screen TV. Don’t worry, it was completely broken and we were planning on throwing it away anyways.
Needless to say, it was a late night and the next morning I was needing some caffeine and somewhere quiet to read so as not to wake the sleeping beauties back at my apartment.
Starbucks it was!
I packed my own oatmeal and sat somewhere out of employee view. Joey informed me that that was weird.
Whatever, that Starbucks “Perfect Oatmeal” isn’t so perfect.
Starbucks is literally a three minute walk from my apartment but my oatmeal still managed to get messy on the walk over.
It was so nice to eat, sip and read some hip hop history 🙂 It helped that the first chapter was all about baseball. Yes, baseball and hip hop are connected somehow. Don’t ask me to explain though.
I was staked out for a few hours then headed back home and enjoyed some R & R by watching Inception in bed. Only made it through ~30 minutes but I’m already extremely confused.
At 2 I dragged myself out of bed long enough to make lunch.
Salad container = great way to toss a salad.
Yes, that would be an entire head of broccoli and I ate every.damn.bite.
Put the lid on.

Field Roast Grain sausage & ketchup on the side. Note to self: do not microwave sausage unless you enjoy eating shriveled food.
This meal held me over until we ate dinner around 8:30 PM!! I was completely shocked.
It was a late dinner because Joey and I babysat my little nephew so my brother and sister-in-law could go out to dinner (we got them a gift card to Outback Steakhouse + free babysitting for Christmas). That little guy is so cute and I mean my nephew, not Joey. Although the two of them are absolutely adorable together.
Gush.
We hit up Proto’s on the way home for some pizzaaaaa!
2 pies split 2 ways. The Ruby Pie with pesto, mozzarella, feta, kalamata olives and artichoke hearts and the Tomato Pie with sauce, tomatoes and oregano.
They were both awesome but I was really feeling the Ruby Pie. Yummmm.
Joey is already out like a light so I might do a little more reading. We are a riot, I tell you.

Fate
It was my fate to go to yoga today.
I had planned on going since I have a break from 10:20 till 2 PM on Thursdays. The homework load isn’t too heavy on this first week so I wanted to use the break for exercise instead of school work.
BUT Beanie texted me this morning asking if I wanted to go to lunch at the new Whole Foods in Boulder.
I was torn. Really. You should also know that I’m a REALLY bad decision maker.
I pondered my decision over some morning oats.
Simple banana-whipped oats, topped with:
- cranberries (I always mix these in during the last few minutes of cooking but I forgot so they went on top and were mixed in after being photographed — I know you were really concerned…)
- granola
- coconut butter
- drizzle of maple for a maple moat
I nixed the nut butter because I had packed an apple and peanut butter as a snack and sometimes too much peanut butter makes my stomach cranky. <— I developed that theory last year when my stomach was consistently hurting and I was also eating PB daily. Who knows if that’s really what it was.
With no decision reached, I packed my yoga clothes and headed to school.
My class ended up lasting only 20 minutes (oh how I love first days) so I asked forced Joey to look at the yoga schedule and as it turned out there was a Core Power 1 class at 10:30!!
This meant I had time to get to the studio, change, sweat it out, cover up my sweat and meet Beanie for lunch at 12:15. See, fate!
It felt so so good to get in a work out. And even better to see this in front of me.
The parking lot at the Boulder WF is always such a disaster zone. Cars everywhere, small spaces and hardly ever empty ones! What can I say, we Boulderites love our whole foods. Luckily, I took the bus and avoided the whole mess.
This location just expanded to fit a giant healthy food court. Yes, I just put healthy and food court together.
I was so overwhelmed when I walked in and by that I mean I wanted to eat everything I saw!
- Pizza bar (vegan pizza available)
- Coffee area (you can get drinks made with almond milk or get kombucha on tap)
- Huge salad bar
- Huge hot bar/cold bar
- Pastry/bread counter
- Dessert counter (I was really tempted to buy a tiny cupcake but I was stuffed and opted for a sample of a raw chocolate and coconut treat instead)
- East Asian counter
- Sandwich counter
- Mexican counter
I refrained from adding an exclamation point to the end of all of those.
I ended up with a bowl full of random salad-y things plus some soup on the side.
- Sweet potato, corn, black bean and pepita salad
- “Superfood salad” with kale, blueberries, cashews, carrots, onion, tomatoes and edamame
- Curried golden beets
The Apple Pumpkin Soup was seriously delicious. That hint of apple was the best part. Note to self: recreate this at home.
I took a total of 6 bus rides yesterday!!
