Carrot Cake Pancakes
Well.
I didn’t win the Mega Million.
In fact, out of the 55 tickets I had between myself, my co-workers and Joey, I didn’t even win a measly dollar.
But.
I did go out on Friday night and watch an angry boyfriend drop his girlfriend’s phone in her drink.
I did go on a bike ride. And no I basically can’t sit down. Bike seats don’t do good things to your body.
I did watch In Time and about a gajillion episodes of Boy Meets World and the Wonder Years.
And I did make pancakes. Carrot cake pancakes, to be exact.
I’m not really sure how I feel about carrot cake. I mean, that’s like an oxymoron, isn’t it?
Carrot. Cake.
But to be fair, I’m not really sure I’ve even ever had carrot cake. Because if I’m going to have cake, there’s no way I’m going to risk eating a kind I might not like. But I had just gone on a seriously long run. Like 4 miles long. And I don’t know when 4 miles got to be “seriously long” but I was feeling adventurous after that long of a run, so I just went for it. “It” being oxymoronic carrot cake pancakes.
Confession: I’m the world’s worst egg cracker. No, really. My mom would be so disappointed. She’s one of those cracks-an-egg-with-one-hand-like-it’s-the-easiest-thing-ever kind of people.
I put Joey on egg cracking duty.
It smelled like fall in this bowl.
I’m up for anything that smells like fall.
Hmm. Looks… carroty.
Carrot Cake Pancakes
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- dash cloves
- dash ginger
- 2 tablespoons brown sugar
- 3/4 cup milk
- 1 1/2 teaspoons vanilla
- 2 eggs
- 2 cups shredded carrot
- Mix flours, baking powder, spices and salt together in a bowl.
- Mix milk, brown sugar, eggs and vanilla together.
- Add wet ingredients to dry, then fold in shredded carrot.
- Drop batter by the 1/4 cup onto griddle or pan and cook until golden brown on both sides.
- Top with butter and syrup and enjoy!
I’m basically out of maple syrup. And being the kind-hearted person I am, I made sure Joey got his fill before I poured mine.
I’m like a regular old martyr.
And all oxymorons aside, these pancakes were delicious. Even the skeptics approved.
And by skeptics, I’m talking about Joey and myself.
If I’m not winning the lottery, I’ll take pancakes as a consolation prize.
Well, you aren’t richer but at least you ate some good food!
How about I come over sometime and you make me carrot cake pancakes? I’m pretty sure I’d love them 😉

Carrot cake is so good. Carrots really are quite sweet on their own, we just don’t usually notice because we put them with savory things.
I need to try it… eventually.

Ha ha! It was the first ticket I’ve ever bought and actually, Joey bought it because I didn’t have my ID and we were scared I don’t look 18… which is truly depressing…

Oh those do look yummy! I love pancakes,and kuddos to you for giving Joey his use of the syrup. I have to admit that I would have done the same thing. Only because I know that I can find other things to use to eat on my pancakes, lol!

I’ve always wondered how I can be such a terrible egg-cracker and bake so much. I guess you’re in the same boat! And those pancakes look amazing! Lately I’ll take any excuse to eat syrup.
i went on a bike ride the other day too and i’m still sore! haha. i started to spin today and was like, nope. not gonna happen haha
i am such a sucker for pancakes. one of my fav foods for sure. pair that with veggies and i’m totally in!
Ugh, the dreaded biker butt! My last ride on a bike ended in me not being able to walk straight for almost two days! Never again…I’ll just stick to running as my cardio thank you very much!
I LOVE homemade carrot cake pancakes! I’ve never actually made carrot cake, but I have had it and it’s always a bit too sweet for me…hence the reason I love the pancakes so much!
One of my goals in life is to be able to crack an egg with one hand (I know, my life is FULL of excitment!)
