What I Ate [When I Quit My Job] Wednesday

If you follow me on Twitter (and you should because you’ll get to hear about hilarious things, like when a lady told me I remind her of her half Japanese niece — wait what??), you know that I’ve been kind of unhappy at my job.  And by “kind of unhappy,” I mean I’m sick of coming home angry, stressed, annoyed, dirty, exhausted and unable to properly function for the rest of the night.

After much encouragement from friends, family and Twitter followers (seeee, if you followed me on Twitter, you could have been one of those encouraging people!), I finally gave my boss my two weeks notice yesterday.  Now I don’t have a job I hate.  I just don’t have a job at all. 

But I’m trying to stay positive.  And what better way to stay positive than to eat tasty food and blog about it?  Plus a foodie party always makes me happy.

Peas and Crayons

Breakfast:

Cornmeal pancakes topped with melted Justin’s Chocolate Hazelnut Butter, dried cranberries and a drizzle of maple syrup.

Have you ever wondered what it would be like to eat cornbread doused in chocolate and maple?  Me too.  And now I know it’s delicious.

I’ll perfect that recipe and have it to you by 2013.

Lunch:

IMG_3798 Pumpkin Mac and Cheese, plus kale and peas.

I get the mac and cheese + peas thing from my mom.

She also eats mac and cheese mixed with Chinese food leftovers…

Dinner:

IMG_3314 Chickpea Potpie with Cornbread Crust.

One of my favorite recipes!

Nighttime Snack:

IMG_3527Half a banana, plus peanut butter and maybe a few chocolate chips.

A bite of a raspberry truffle cake pop, courtesy of Starbucks might have snuck in there too.

    Holy cow I had no idea you were thinking of doing that! I clearly don’t spend enough time on twitter, haha! I wish you the best in finding something that makes you happy, and good for you not settling for less.

    Good luck with the next part of your life… it must be such a relief to be able to count down the days until you never have to work their again!
    I once quit on the spot at a coffee shop. I never thought I would do this as I tend to be professional/ respectful… but the place was recently under a new owner who everybody despised. He would criticize our baking skills, randomly reward us by slipping $20 under the table… strip us of all the things we had with our old owner who trusted us. He was the worst! He even started telling me about how bad the Iraq war was the day my parents came in to see me and casually mentioned that my brother was headed over seas… I was like “WTF parents? WTF boss?” I quit a week later. Freedom.

    Proud of you for doing what you felt was best for you. I was volunteering doing something that I realized I haaattted. Unfortunately something happened instead of me quitting that– well, enabled me to quit. Now I’m just trying to find out what I want to do. (Or try to find a job in journalism which has been sooo tough) =/. I hope you find what you’re looking for! Do you have any ideas?

    Lauren, for what it’s worth, it took me not having a job to finally get off my ass and get a new one. As you may know I worked at the nastiest burrito shop on this side of the Mississippi, and for some reason I continued to work there dispite its horror, oh yea and making minimum wage. Finally that shit hole closed down and I was forced to find a new job, and sure enough I am making almost double what I was back then. I bet this will be the best decision that you have ever made. And I bet you will find a new job in no time at all.

    I am a firm believer in doing something that you love and happy with. It is the worst to stay in a job that you hate and makes you feel horrible. Good for you for stepping up. I have quit jobs unexpectedly before in the past. It is scary but you will be glad you did it. Good luck with your next chapter 🙂
