Weekend Happenings

By now you’ve probably noticed that I’ve given up the whole posting on Saturday thing.  Between training runs, grocery shopping trips and working till 10 PM, there’s just not much extra time to bust out a half-assed post, so I’m totally okay with taking a day off.

Plus then it looks like I have a lot more to say on Sunday.

Spinach and Buckwheat Egg Bake.

Seriously though, I really recommend this recipe.  I substituted goat cheese for the cheddar, almonds for the walnuts and nixed the nutmeg and what resulted was a creamy dream of a dish that’s perfect for breakfast or dinner.  Those are the same meal anyways, right?

And if you’re like me and only have one ramekin, you can save that one for yourself (obviously) and throw the rest in a regular casserole dish.

Cottage cheese + goat cheese = bestthingever.

And speaking of best things ever, I know have a Pinterest account to organize all the recipes I’m constantly bookmarking and filling Joey’s favorites folder with.

In other news, I’m only seconds away from eating enough strawberries to become one myself.

But when strawberry season finally rolls around and they’re on sale for $2 a pint (organic, no less!) then I feel it’s my duty to buy and eat them like it’s my job.

Preferably accompanied by some cereal, almonds, chocolate chips and coffee cake.

And when I run out at home, I can always go out for froyo.  Because where there’s froyo, there’s certain to be strawberries.

And granola and brownie bites and cookie dough and peanuts…

Bet you can’t guess whose cup is the one filled with sprinkles and gummy bears.

It’s the same person who kinda sorta thinks be sensitive to dairy, but is eating quesadillas and yogurt anyways.

This would mark the second time in the past two weeks that I’ve had to remind Joey of his own middle name, which does not begin with the letter A.

But I don’t have to remind him how much he loves “cheesey” kale.

Seriously easy.  Throw kale in a pot and wilt slightly then mix in a drizzle of olive oil, garlic powder and 2 tablespoons of nutritional yeast. 

Best for people who feel sick after eating cheese quesadillas and yogurt.

Or people who feel sick after looking at a basil plant that hasn’t grown a single leaf in about a month.

This week in half marathon training:

I’m happy to report that my 7-miler went really really well.  I was looking back on old posts of mine and decided to take a tip from myself and slowww down.  I think it saved me.  I felt fabulous the entire time.  Even during the last 3/4 of a mile that is a slow uphill climb.  Take that, hill!

Then I took the most glorious afternoon nap a few hours later.  I’m okay with getting up early on a Saturday to run for an hour if it means I can nap later.  Who’s with me?

I put together the weirdest training plan and have myself scheduled for two more 7-milers for these next two weeks.  Oh well, I’m okay with that 🙂

Off to work, then home for burgers and grilled pineapple!

Strawberries, yay or nay?

What are your favorite froyo (or ice cream or banana soft serve) toppings?

Are there any things you’d like me to post about??  If not, I’ll gladly continue to throw together erratic rambling posts 😛

    Hey chica! I have been hoarding berries of all kinds lately. As for the fro-yo, I go with cheesecake bites, cookie dough bites, brownie bites, and a squirt of marshmallow cream…….totally makes the fro-yo unhealthy, lol!

      I *tried* to grab some healthier toppings but the brownie bites and cookie dough pieces were calling my name! 😛

    hah, posting on Saturdays does not happen for me, either. okay, and some other days, especially lately! haha.
    looks like a super fun weekend 🙂 the buckwheat/egg bake looks SO good, and I hear you on strawberries. Can’t get enough of them when they’re in season! which…sadly…they’re not anymore 😦

    i cannot. wait. to be able to get a pinterest acc’t!

    everything looks so good! would love that quesadilla right now and it’s only 10:30 am… normal? NAH. and we’ve given up with weekend posts! rather just live our weekends 😉

    I can’t do Sunday posts… sometimes a girl just needs a little time off from the computer, and a whoooooole lot of strawberries. I love them and pretty much all berries in general. I’m really looking forward to fall coming around, but it makes me a little sad to think that all the fresh fruit is going to vanish 😦 Gotta stock up while we can!

    Major yay on the strawberries. My fav fro-yo topping is either granola or mango – better yet, let’s make it both. 🙂

    I take Saturdays (and usually Sundays) off as well–used to post, but my weekend ones were always weak, could tell I’d rather be elsewhere than in front of a computer 🙂

    And I don’t even eat eggs, but that bake looks amazing.Mm, I love strawberries, but never want to spend the money on ’em. Gotta find a sale! Or a froyo place ;D

    And can you really run 7 mles in a hour? I can run like.. 5.5 in an hour. 🙂
