Afterglow

Hello again.

I loved all your comments on my controversial foods post.  A lot of good points were made.

For some reason all of my pictures from yesterday are glowing.  I don’t think I mind.

Breakfast oats were great.

Cranberries mixed in and topped with:

  • pepitas
  • chocolate hazelnut butter
  • coconut butter

Melty goodness.

I also homemade a chai latte.

Soak 2 bag of chai tea in a cup of water 3/4 of the way full.  Heat almond milk then froth in the blender and pour over the tea.

I ended up adding honey later.

My to-do list included lots of not so fun things, like cleaning my room, picking up my dry cleaning and buying my books for class (I had to buy Decoded by Jay-Z ha ha) but it also included a fun project.

Can you guess what it was?

That’s right, I made my own seitan!

It looked like a giant Chipotle burrito or a huge sausage link.

Then I dished up an excellent lunch.  I don’t know where I’d be without giant lunch salads!

I mixed in some leftover roasted veggies.  Doesn’t everyone use their kitchen shears to cut up sweet potato discs?

Roasted brussels, sweet potatoes and carrots went on top a bed of mixed organic greens.

Topped with vegan parmesan “cheese” and Gena’s balsamic tahini dressing .

Half an apple sprinkled in cinnamon on the side.

And then my seitan was done!

Poke.

It came out a little tougher than I would have liked but there’s plenty of time to perfect it.  Joey and I couldn’t believe how much it tastes like meat.

I’m off to my second food class.  Wish me luck!

    How AWESOME – you made your own seitan!
    Could you tell us the recipe you used, please?
    It looks SO good 🙂

    I heat up my almond milk and usually just pour it into my teas (this taste good but I always wished I had a steamer!)

    I think you just changed my life by mentioning that you put in it a blender–Genius — don’t know what I never thought of that haha 🙂
