A Hidden Surprise

Yesterday did not start out to well. I woke up at 8:05 and was supposed to be at work by 8 ooops…So as you can imagine I didn’t have time to make breakfast 😦 I still put together a lunch though.

Sorry this is the best pic I have. I put together a PB & Honey sandy and had a banana bread Larabar YUM!!

It was finally time to come home from work and I made a Cucumber & Black-Eyed Pea Salad w/ Chicken

First off I made the dressing which consisted of EVOO, lemon juice and oregano. Didn’t care too much for this but tasted ok

I chopped up this awesome cucumber that we got at the farmers market last weekend and then I chopped the bell pepper in half and SURPRISE a colorful little pepper on the inside! I’ve never seen this before so I was pretty excited.

Complete! ingredients cucumber, black-eyed peas, red bell pepper, red onion, black olives & feta cheese. I also added some chicken so it would be a little more filling. I would eat this as a lunch next time but overall pretty good.

I headed off to the Rockies game last night and Lauren’s favorite player Troy Tulowitzki hit a 3-run home run to go up 1 in the bottom of the 8th!! Go Rockies 🙂

    I love it when there are baby peppers in my bell peppers! I was told it means good luck :). That salad looks tasty, I really appreciate lettuce-less salads.
