Friday Randomness

Thank you all for the birthday wishes to my sister.  She even made an appearance in the comment section for maybe the second time in my blog’s life.  Exciting stuff, I tell you.

She proudly boasted that she didn’t eat a meal at home all day.  I certainly contributed to that by buying her lunch at our new favorite Thai restaurant near campus.

And dinner was at The Med.  Because it’s delicious and because the happy hour menu can’t be beat.  Okay, it probably can.  What do I know about happy hours anyways?  Not much, not much.

Anyways, I digress.  The happy hour didn’t disappoint.  Or maybe that’s the white sangria talking.

I realize I’m holding a margarita in this picture (and that the flash is exaggerating my ghostly complexion), but I assure you I took one sip and passed it on to my dad.  The sangria is better anyways Smile with tongue out

Note my dad grabbing a deviled egg in the back of this picture.  That pretty much sums up how patient my dad is.

Shrimp (in garlic, lime and olive oil), olives, roasted red pepper hummus (that I wasn’t impressed with), caprese salad, polenta and the afore mentioned deviled eggs.

All were delicious, although I think those shrimps took the cake.  Or I’m just obsessed with shrimp.

I got the vegetarian paella for dinner.  I’ve never had paella before and although I can’t really tell you what the difference between paella and risotto is I still thought it was delicious.  So delicious that when my dad eyed my plate and asked “Are you all done?” I made a shield with my hands and said “Yes and I’m taking the rest home!!”

The night was rounded out with some sugar in the form of Boulder Baked cupcakes.

Although I’d heard of Boulder Baked and tasted a cookie once, I’d never been into the bakery.  I was pleasantly surprised at how many cupcakes they had to offer (gluten-free and vegan included).  All of which had been made fresh that day, or at least I assume that’s what they were doing all day considering the bakery didn’t open until 4:30 PM.  It’s owned by a brother and sister and all the recipes are from their mother.  I’m a fan of family recipes. 

P.S. My sister is a little red head now.  Doesn’t it look fab?

Vegan chocolate banana with peanut butter frosting for me and vegan and gluten-free pumpkin spice for the birthday girl.  Both were great!

Now it’s officially the weekend and although that should bring some joy to me, I’m feeling tired and out of it today.  I think working 8 hours on Tuesday and sleeping a mere 4 hours that night has finally caught up with me.  Or I’m depressed that I have to buckle down for this upcoming last week of school, or just that it’s the last week of school…

Who likes school?  Uh yeah, that would be me.

Also, Fridays aren’t my favorite day of the school week.  My schedule forces me to eat lunch early with means I have to eat a light breakfast and cereal just bores me.

And I was tempted to eat Joey’s cupcake (which I brought back to him from the birthday celebration and he put straight into the fridge instead of his mouth, weirdo alert!!).

Hot and Cold Oats

I’m not really sure what is going on with our Colorado weather.  One day it’s 70 degrees and sunny, the next it’s gloomy, raining, bitter cold or windy.  Or you know, a combination of all of those things.  Those are fun days, my friends.  Colorado weather is such a tease. 

You would think I’d be used to it by now, but no, I certainly am not.  And the fact that I never know what kind of weather I’m going to wake up to during Springtime in Colorado means I’m never prepared.  And I don’t mean clothes-wise (although, I’m never prepared in that sense either, but that’s another story), I mean breakfast-wise.

What, like you don’t plan your breakfasts based on the temperature outside?

Cut to Monday morning when I woke up, got in a lovely 3-mile run, immediately followed by a hot shower and then having to blow dry my hair, plus the pleasantly warm temperatures outside.  I don’t think I ever stopped sweating that morning.

And hot oats sounded excruciatingly sweat inducing.  No.thank.you.  And I had conveniently not planned to have cold overnight oats.  Lucky me.

Solution?

Hot and cold oats, aka hot oats, covered in cold milk.  Cereal oats, if you will.

I usually make my oatmeal with 1 cup of almond milk so to make these colder oats I simply subbed half a cup of water for half a cup of the almond milk then poured half a cup over the oats afterwards.

Is it just me or does this hazelnut butter appear as if it’s suspended mid bowl of milk?

This was refreshingly cooling after all that heat-filled activity.  Plus I got to participate in my favorite part of cereal-eating: the drinking of the extra milk from the bowl.  I used to be a strict non-cereal milk drinker but I’ve grown to love it.  Maybe it was because my cereal of choice was Cheerios and the leftover milk tasted like it was full of sawdust…

And of course by the end of the day, it was pouring!  Colorado, please get a grip already.
