Celebratory Lunch
I think I’ve said enough about The Med. So let’s let these pictures speak for themselves, shall we?

And then I proceeded to go home and crash for a solid two hours. Nap, check!
Obviously, for me The Med is all about the tapas.

Cinco de Mayo (or is it?)
Okay, I know it’s no longer the fifth of May but cut me a break I was too busy shopping, mani/pedi-ing, eating and sipping margs to post on the actual day.
As you may have noticed, I’m not much of a Mexican food eater, but I make exceptions. And Cinco de Mayo is definitely one of the times when I do.
Plus I just love fajitas and will make any excuse to eat them.
I may not love Mexican, but I do love…
Fajitas. And shrimp. And a combo of the two.
And I may not love spicy foods, but I do love…
Some heat on my shrimp, which is why I marinated these in:
- olive oil
- hot sauce
- garlic powder
- cinnamon
- salt pepper
- cayenne
- paprika
- water
I may not love plain avocado, but I do love…
GUACAMOLE. Capital letters are required for a love this strong.
I went the lazy route and just mashed some avocado with bottled salsa then threw in some garlic powder, salt and pepper and Joey declared it “Oh-my-god-good.” I should be lazy more often.
And because I ended the day on Wednesday when green food, why not start the next day the same way?
No, there was not guacamole in my overnights oats, although that doesn’t sound half bad. Okay, it does.
Green Monster Oats
- Blend spinach, banana and almond milk.
- Mix with 1/2 cup oats, chia seeds and additional banana slices.
- Refrigerate overnight.
Kinda goopy, totally good.
Love licking nut butter off the back of a spoon ![]()
I may not love Mexican, but I love an occasional margarita.
Especially when it’s of the strawberry variety. And doesn’t taste like tequila.
We had dinner at Zolo in Boulder. Sitting on the patio with the mountains in front of me was divine.
As was Joey’s shrimp and red chile tamale, which I definitely stole some bites of.
And my tilapia tacos were slightly lack-luster in comparison but that avocado crema was delicious.
Do you celebrate Cinco de Mayo? I’m pretty much a sucker for any and all holidays that involve food, surprise surprise ![]()
The Graduate
So so many wonderful, fun and exciting things have happened in the past few days. I hardly know where to begin.
I could ramble on about Cinco de Mayo, but that was yesterday and this is today.
And today, I’m a college graduate.
Note: Cookies do not make for a good breakfast.
And clearly it was a beautiful day to graduate. It may have been cloudy, drizzly and gloomy all week but today it was 70’s and sunny in Boulder. Mother Nature knows not to mess with the English commencement.
I have a proud boyfriend.
And even prouder parents.
And supportive friends.
And a sister that will humor my picture taking on “my day”.
Hannah (my roommate and long time friend) were just looking at a picture of us two from our preschool graduation. And 17 (I think?) years later we’re still friends and spent another graduation together ![]()
For some reason I managed to get no pictures with my brother, sister-in-law and nephew, but I’m so glad they could be there.
And let’s not forget the fact that I’m so proud of myself. I may not have written an honors thesis or graduated with multiple degrees or even with distinction but I graduated in four years and although I may not have enjoyed every minute of my college career I can confidently say that I loved college. I am genuinely sad to be leaving it, but excited to see what comes next.
And speaking of what comes next, I’m leaving for New Orleans tomorrow morning!!!
