Weekend Memories Monday
Okay, so this post totally started out as a “Six Thing Sunday” post, but then Sunday just slipped right away from me. And I also accumulated more than 6 things, so really that wouldn’t have worked anyways.
I had plans to see Harry Potter on Friday night, but plans fell through 😦 To say I was bummed would be a huge understatement. But there were definitely some other highlights.
1. Ice cream sharing in downtown Louisville.
When in doubt, always always go with chocolate chip cookie dough.
We tried out Sweet Cow and left with happy taste buds and a Sweet Cow tattoo, score!
I wish I could transport you all to Louisville for a few minutes. It’s the cutest town and I think I totally took for granted that I grew up there.
2. Breakfast at the Farmers’ Market.
I wish this plate was more photogenic, since I eat it so often.
Scrambleds, polenta, puttanesca and focaccia. <— I wish I didn’t have to look at the spelling for so many Italian words. And no, scrambleds is not an Italian word. Or even a word at all.
Fact: Breakfast tastes better when it’s on Dad.
3. Crazy FM produce.
Fact: It’s incredibly hard to not buy odd colored produce “just because.” I’m glad I resisted and my wallet is too.
I ended up with some onions, corn, cauliflower, yellow squash and some patty pan squash, which were too adorable to resist.
And now for a segment I like to call “Pictures taken in my car” or “Pictures of me holding something.” I hope you enjoy.
4. Tree of Life = weirdest movie ever.
Have you seen the previews for this movie? It’s Brad Pitt and Sean Penn and that’s all I needed to know. I was sold. I really wish I could tell you what it was about or whether I even liked it, but I’m still scratching my head on this one.
However, I do know that visually, this movie was astounding!
5. Lunch at the giant Boulder Whole Foods.
Vegetarian Banh Mi wrap. Tofu sounded good, but in reality it wasn’t all that great.
But I did stock up on raisins, so I guess the annoying adventure through the parking lot was worth it.
“It’s getting real in the Whole Foods parking lot.”
6. This is what your iPod looks like if you knock it off the treadmill mid-run.
I’d like to explain how it ended up wedged in the machine, but I don’t know the proper names for treadmill parts and I fear talking about “the spinning part” and “that side piece” will just confuse everyone.
And to think I always thought that case was such a waste of money.
7. Kombucha treat.
Must grocery shopping make me so parched?
8. This is necessary if you want to put your Kombucha in your parents’ fridge.
It worked.
9. Long run this week was a 5-miler.
And I totally JUST took that picture.
Never underestimate the peace of mind that comes with an early morning solo run.
I’m going to go ahead and call this one of my favorite runs ever. I did not expect it to feel easy and was pleasantly surprised when it did!

And that concludes my weekend memory recap. This week I’ve got my mom’s birthday, packing, paint color picking and all the “fun” stuff that comes with moving.

Round Up: A Week in Review
Can I just tell you that this happened yesterday.
I was leaning over the veggie drawer in the fridge and tossed a bag of garlic onto the counter and it landed directly in the glass of water I had just poured myself. This is more astounding if you know how bad I am at throwing/catching/aiming.
What are the chances?
Anyways, moving on. It’s Friday! Aka rest day, aka I’m going to the pool day. Oh and did I mention I’m seeing Harry Potter? I’m beyond excited <— nerd alert!
Seeing as it’s Friday, I thought I’d do something fun and give you a week in review. Reviews are always fun, aren’t they? Unless it’s a test review. Those, not so much, but I digress.
This week in blog land:
- I scared everyone away by opening my post with pictures of a bacon-topped cupcake or so I’m assuming, due to the whopping 5 comments I got back.
- I shared recipes for jam, crumb cake and pigs in a blanket and was happily surprised by how many people also love pigs in a blanket, as well as jealous that many of you have the ability to write your own recipes.
- I posted everything I ate on Tuesday and talked about judging others’ food choices.
- And finally, I announced that I’m training for a half marathon and loved all your wonderful responses.

In the real world:
- I discovered plums and chocolate hazel nut butter are an amazing combo.
But really, what isn’t good when covered in nut butter?
- I got a blender from my mom 🙂
You know your blender is high-tech when it has a “Frappe” setting.
- I got a pedicure and realized feet pictures just can’t be good looking. Oh and that I have weird veins in my feet that creep me out.
- I spent way too long at Target looking for a certain hairspray and left empty-handed. Only to find it at Walmart and on sale, no less!
Please ignore my yoga mat. A girl needs one set out in the living room at all times in case the urge to downward-dog should arise.

I was denied by Foodgawker because this picture has dim lighting? Say what?!

I attempted to make pancakes using coconut milk (full fat!) and may have thinned the batter out a bit too much…
I remedied them by dousing them in maple syrup and enjoying a bowl of watermelon on the side. Which brings me to my next point.

I ate my weight in watermelon this week. Joey informed me that he did as well. Yet there’s still an entire bag full in the fridge!
Fact: I am eating watermelon as I write this post.
Recipe review:
Not 100% sure I love millet, but anything that involves olives and goat cheese has my seal of approval.
It may have had something to do with the fact that I was in a great mood, but I loved this dinner. I totally didn’t follow directions and swapped fish out for tempeh and made up my own marinade but the idea was the same.
The jalapeno raita had me coughing up a storm while I was making it (am I the only one who gets jalapeno fumes stuck in their throat??), but once it was made it was really great.
With watermelon on the side, naturally.
Camera cord photo bomb in the corner.
Oh and don’t even get me started on those tortillas. LOVED. It was a mixture of corn and flour and they rocked.
I would make this again for the smells it created in my kitchen alone!
When are they going to start making basil-scented perfume?
I cut the oil down from 1/4 cup to 1 T because, well after I added the 1 T I felt it didn’t really need the rest. It was creamy enough from the strawberries.
When I poured the pesto onto the noodles it seriously smelled like some kind of berry pastry!
Overall I thought this was a really nice recipe. It screamed summer and I loved that sweet hint the strawberries gave the pesto.
Oh, and I’m eating a bowl right now.
Last, but not least.
Which had me using wonton wrappers for the first time ever.
And honestly, I haven’t baked or tried these yet. But look how cute they are!
I know, right, so cute.
Oh and I totally de-veganized them by adding real cheese. What can I say, I like me some cheese.
I’ll let you know how they turn out. Because I know you’re all on the edge of your seats about it.

Honestly
If you read my blog, then you already know I’m nothing if not honest with you guys (and gals). Or at least I try to be.
Seriously, I value honesty.
Which is why I’m announcing today that I’m going to run the Denver Rock ‘n’ Roll Half Marathon (again) this October.

And it’s also the reason I’m explaining why I was so hesitant to make such an announcement to you all.
I’ve noticed a lot of resistance towards “healthy living blogs” lately. I’ve seen lots of posts that call out some of the behaviors that are mainstream in the “healthy living blog” community and questioning whether those behaviors are really all that healthy. I’ve been loving on the attitudes of those bloggers who promote a more “moderate” lifestyle. One that doesn’t involve running marathons or going vegan, which is why I felt very hypocritical when I made the decision to train for the half.
Is this the part where you say, “Yeah, she is a hypocrite!” and click out of this page? I hope not.
Allow me to explain.
No, I don’t think life is about extremes or pushing yourself beyond your own limits.
No, I don’t think you have to run long distances to be healthy or happy. In fact, I don’t think you have to run at all.
No, I don’t think you have to be training for some big race to fit in in the blog world. Or to stand out, for that matter.

That’s me…
This decision wasn’t about anyone but me.
I wanted to do it. I thought long and hard about it before I decided to commit to training. And I will only care about how I feel at the finish.
For me, running a half marathon is totally do-able. I know my body is capable because, heck, I’ve already done it! It’s not about burning calories or having awesome calves and a six pack (um, yeah I gave up on having a 6 pack long long long ago). And it’s not about needing to feel accepted by the mainstream blogging community by doing something that I’m not really ready or up for.
It’s about the sense of pride and accomplishment that comes with finishing a long training run. And the even greater sense of victory after seeing all your hard work pay off during the actual race. It’s about feeling invincible and seeing the amazing things I can do when I put my mind (yes, my mind — for me, running is more mental than physical) to it.
And it’s partly about bonding with this guy.
That being said, I do want to share the experience with you and be able to be excited about training. I don’t want anyone to be turned off by having to read “yet another long distance runner’s blog.”
Please say you won’t be.
And in true Honest Abe Lauren fashion, I promise not to say things like “oh and then I ran 10 miles” and move on like that’s not some huge feat. Because 10 miles is a huge feat (any distance is, if you ask me :)) and even though I know I can do it (and more!), I promise not to belittle anyone (including myself) by making it seem like long distance running is some easy ordinary thing. In other words, I promise to address it like a real person and not a superhuman running machine.
And speaking of superhuman running machines, did I mention Joey is doing the full marathon?
I think he just wants an excuse to eat a burrito twice the size of his head again.
Psychooo. Just kidding. He’s totally capable and who am I to judge someone for the decisions they make in their own lives?
In conclusion, don’t dismiss me because I turned out to be another long distance-running blogger. I’m still much much more than that.
