Leftovers for Lunch
I really don’t know what I would have done this week if it hadn’t been for leftovers!
Let me take you way back in the past to Thursday when sweet potato and black bean burrito + squash and carrots were on the lunch menu pour moi — Did you know I took 5 years of French in middle/high school? And all that remains in my memory are random works and fragments of sentences, how sad.
I may or may not have smelled like red onion and cashew cheese when I went to class…

This fruit salad was part of my afternoon snackage. I’ve recently become addicted to cereal as a snack but fruit seems much easier to transport to campus.
I then launched into a 48 hour bad blogger phase and managed to take a whole 5 pictures, whoops!
Leftovers sometimes don’t make for the best pictures, but let me just make it known that quinoa lasagne is still good re-heated 3 days later.
Dessert pizza anyone? When the roomies offer up a combo of sugar cookie and fruit, I always accept!
Ladies Night ——> Lauren feeling less than 100% the next morning. A breakfast burrito was definitely in order. P.S. this is a sign that I’ve had one drink too many the night before!
You’ll just have to use your imagination because once I cut into that baby there was no time to stop and take pictures.
Breakfast Burrito of Champions:
- Egg
- Black beans
- Cheese. I used mozzarella because it sounded better than cheddar on that particular morning
- Green chili on the side for dipping
- 1 large flour tortilla. We got these at the FM and I thought they were simply amazing. Sadly, they were out of the size I wanted when we went back this morning 😦
Then I got a parking ticket, blehhh. I guess that’s what I get for parking in 2 hour parking for over 5 hours…
My mother and I dined at the Village Tavern last night and while my big Tavern Salad was quite good, the bowl of clam chowder I ordered as a starter stole the show.
Talk about rich creamy goodness 🙂
We then went back to my parents where we proceeded to look at dogs that are up for adoption for about 2 hours. We sure know how to have fun on a Friday night I tell ya…
My heart was crying out for this little lady
(Source)Her name is Suzy Q and she’s an 8 year-old blind dachshund. I was on the verge of tears when I read the description. Now I keep asking Joey “So when should we go pick up our dog?” He’s definitely not taking me seriously.
Have I mentioned how difficult it is to fit in training runs alongside school and work? I’ve been trying to mess around with my schedule so that I can still run during the week. Right now I have 3 days of cross training/rest in a row which makes running the next day hard! I don’t know what I’m gonna do, but I’m sure I’ll figure it all out 🙂
Despite my legs feeling a little rusty, we had a good Four.Five mile Fall run.
- Mile 1 – 9:40
- Mile 2 – 9:22
- Mile 3 – 9:22
- Mile 4 – 9:08
- Mile 4-4.5 – 8:42 pace!
Finished in about 42 minutes I think and I could not have asked for a better morning. Cool temps at 9 AM, ahhh so nice 🙂
Eating and produce purchasing at the FM commenced later than usual for us so we got to do some lunch sampling. We shared an order of pupusas from Tres Pupusas. What the heck are pupusas you ask? It’s a traditional Salvadoran dish made with corn flour and filling of your choice, duh! I went with vegan black beans and organic sweet corn, while Joey went with a cheese and green chili filling. They look like little pancakes (again, use your imagination because I’m forgetful).
We also snagged up an asian noodle bowl with rice noodles, bean sprouts, cucumbers, lettuce and grilled tofu. Talk about yum, both of these dishes were spot on!
I came back with carrots, of course. Yellow carrots, say what?
Also from the FM:
- GIANT organic peaches. They better be worth the $5+ we paid for just 3 peaches!!
- Potatoes
- Cherry tomatoes
That’s it? Wow, I’ve never seen us leave with such a small amount. Probably because they were out of tortillas and I didn’t see any butternut squash or mushrooms to my liking. C’est la vie (maybe I retained more French than I thought!)
We’re exchanging Joey’s truck and a few extra hands to help move my parents flooring for pizza from Proto’s tonight. They have a cheeseless pizza that is to.die.for.
Wait, when was the last time I actually cooked? Apparently this blog has become more of a guide to eating out than anything else. Don’t you worry, I shall be back in the kitchen tomorrow night (or so I hope!)
I hope you do two things today:
#1: Take a moment today to remember those we lost 9 years ago today and the families who were affected by the tragedy.
and #2: Get outside and enjoy some of that fresh fall air 🙂

Sorry to have pulled a disappearing act on you all weekend! It’s been a busy one, but in the midst of all my activity I DID remember to snap a few pictures.
Shall we start with Friday?
Class was attended, runs were completed, trivia was played — we may or may not have come in 4th… out of 4 — and Mama Pea’s Pumpkin Spice Roasted Chickpeas were consumed.
Nevermind the after picture of these chickies, as the sun had set and the pictures didn’t do justice. Just take my word for it that they were awesome and totally cured my fall food craving.
Saturday began with a trip to the FM, per usual
I took a chance and ordered a breakfast wrap from Tandoori Wraps instead of my usual plate of eggs, polenta and puttanesca sauce from Laudisio’s.
It came with eggs, veggies and curry in a naan wrap, but I was pretty disappointed with it. The veggies were cold so it made the eggs and naan cold and as it turns out carrots and eggs don’t really taste that good together 😦
We picked up a few things and spotted some giant carrots.
Then we watched the Buffs destroy the Rams, huraah! And ended the night with dinner and movie.
My family has been gushing over “Crazy Noodles,” a dish at a restaurant called Tuk Tuk in Westminster so we joined them to try it out.
I hate to admit that I wasn’t too wildly impressed 😦 BUT I would call “Crazy Noodles” a solid dish 🙂
Eat, Pray, Love, on the other hand, was a disappointment. I thought the story was weird and Julia Roberts kind of annoyed me.
By Sunday I was more than ready to return to oatmeal breakfasts, so Scottish oats is was!
Topped with the most melty almond butter EVER, 1/2 a banana, mixed berry compote, granola and cocoa nibs.
Joey allowed me to serve him up my new favorite sandwich combo: pesto, tomatoes, grilled bell pepper + cheese. Mine was open face with a peach, yummmm!
The end of the day went a little something like this: run, eat, sleep. And all in about 3 hours. The 7 miler really took a toll on me this time. We finished in 1:09 — a minute faster than last time 🙂
Dinner was EXcellent!!
Sweet Potato + Black Bean Burritos with Cashew Cheese (from Clean Food)
This was a no-brainer since Joey and I are down for anything in burrito form AND we had just picked up some tortillas at the FM.
Sweet Potato + Black Bean Burritos with Cashew Cheese
Cashew Cheese
- 1/4 cup unsalted cashews
- 1/8 cup nutritional yeast
- 1/2 T canola oil
Burritos
- 1.5 sweet potatoes
- 1.5 T fresh squeezed lime juice
- 3/4 cup cooked black beans
- 1/4 red onion, diced
- 1/2 large tomato, diced
- 4 flour tortillas (the original called for corn)
- 3/4 cup salsa
- 1/4 cup corn (we used fresh)
- Preheat oven to 400* and bake [cleaned] sweet potatoes until soft [about 45min]. We cut these into thirds and let the pieces cook while we ran.
- Grind cashews in a food processor. Then, process with the nutritional yeast until just combined. Add oil and process until just moistened. If processed too long it will become dough-like.
- Cook corn. We snapped a cob in half then brought a pot of water to boil, turned off the water, added the corn and let it sit for 10 minutes, then sliced the kernels off.
- Peel potatoes and mash with lime juice.
- Fold in beans, onion, and tomato.
- Spoon filling into each burrito, roll and place seem side down in a baking dish.
- Cover with salsa and broil for about 3min.
- Add corn + cashew cheese and broil for about 2 more minutes. Watch closely so the “cheese” does not burn.
I’m not going to lie, I let Joey take over the entire cooking of this meal while I showered and proceeded to pop the 5 blisters on each foot that I had from our run — NOT fun!
These were the perfect blend of sweet, savory and sour with the lime juice.
I ate one, then immediately passed out on the couch. I know, I’m such a blast. I really wish I had stayed awake long enough to eat a second one because I woke up around 3 AM and was starving!! Like I said, 7 miles took its toll!

By the way, now that the sun is setting earlier what do you all do about taking pictures at night without natural light?? My dinner pictures are seriously suffering!
French Toast on Friday
Yesterday was a longggg day. So long in fact that I couldn’t muster the energy to take many pictures. And by many I mean I think I took a total of 2, oops!
Allow me to explain…
Wednesday night: Doze off several times on the way home from Red Rocks. Don’t worry I was NOT driving 😛 Finally crash into bed around 1 AM
Thursday morning: Wake up at 6:30 with enough time to get ready, pack a lunch, and stop at Starbucks. I have no idea how I fit this all in!
Here’s where the 2 pictures come in:
Thursday afternoon: Proceed to work four hours, go to class for three, go back to work for 3 more hours. Thank you caffeine!
Thursday night: Miss the bus home and have to wait 3o more minutes for the next one 😦 Call mom who is ordering Chinese and force her to order me some and allow me to come eat it at her place. PERFECT END TO THE LONG DAY, however I was much too hungry to spend any amount of time taking pictures and just dug in instead.
So far, today has been a fairly normally lengthed day, except that oats were once again missing on the breakfast menu
Feast your eyes upon Vegan French Toast
- Mash one banana until it thins out
- Add ~3T almond milk, vanilla, cinnamon, chia seeds
- Coat bread with mixture
- Cook in coated pan as you would normal french toast
I topped mine with a few extra banana slices, strawberries and a drizzle of maple syrup. Oh, and I may have spread some peanut butter between the slices as well. A girl needs her PB in the morning!
Of course I had Chinese leftover for lunch… duh
But I changed it up a little. Got rid of the chicken part of my chicken and broccoli (there was SO much), steamed some carrots, squash and red bell pepper, then tossed the veggies in with the broccoli, rice and sauce.
I love the pop of color the extra veggies gave to the dish!
Ahhh, nothing better than Chinese leftovers 🙂

I also did a short and sweet 2 miler on Wednesday and am proud to report that my second mile was an 8:25!!! Say what?!
I’m slowly learning how to pace myself based on my distance 🙂
I’m not off to consume my new favorite afternoon snack, aka cereal.
