2 P.M. on Tuesday

Yesterday my first class was cancelled, meaning I didn’t have to be at school till 2 PM.  I got SO much done with that much time in the morning/afternoon which makes me really excited for next semester because I won’t have class till 2 EVERY Tuesday, score!

Woke up for a quick run.  Warm up mile on the tread + 3 miles outside.  Have Colorado Falls always been this BEAUTIFUL and I just haven’t noticed?

The Run:

  • Mile splits: 10:00, 9:28, 9:16, 8:48
  • Total time: 37:35

By the way I’ve been wearing my bondiband over my ears to keep them warm on morning runs — hope it isn’t horribly strange looking!

I came home and did the following:

1.  Made breakfast — obviously this was my first priority.

I made my usual pot of oats (1/2 cup oats, pinch of salt, 3/4 cup water, 1/3 cup almond milk, 1/2 banana, 1/2T ground flax).

Then I ran into a giant dilemma.  Regular whipped banana oats or pumpkin oats??

I say, why choose when you can have both?

Topped with cinnamon granola, mixed berry compote and vanilla cinnamon peanut butter.

Ginger peach tea + honey on the side.

2. Roasted veggies for some meal later this week.

I love having things cooked ahead of time, it makes my life so much less hectic.

3.  Made Angela’s Multiseed Crackers

Flax seeds are so fascinating to me!  I soaked them in water and they got so gel-y(?)

These were super easy to make and delicious.  Definitely try them with hummus.

I cooked them in the oven on 170* for an hour then flipped and turned the oven up to 190* for another hour.  They broke apart so each cracker had its own unique shape.

4.  Made lunch.

Black beans + roma tomato + salt + pepper in an Ezekial wrap (which completely fell apart when I tried to pick the burrito up at lunch time).

2 carrots + hummus on the side.  Good thing I bought two containers of hummus this week…

5. and 6.  Finished reading Sir Arthur Conan Doyle’s The Sign of Four, which for those of you curious is a Sherlock Holmes novel and showered.

Quite the successful morning if you ask me!

Crazy Foodie

I feel so much better knowing I’m not the only one who has vactation eating anxiety.

And now if you could all reassure me that I’m also not the only one who goes to such far lengths for good looking blog pictures.  Allow me to explain.  Yesterday I brought a ball jar, half a container of cottage cheese and pomegranate seeds to work then quickly stepped out of the library to assemble my cc and pom in a jar, then proceeded to photograph my creation in front of the many students entering and exiting the library.

Normal, right?

Don’t answer that.

I swear those leaves were pretty much already set up on the table like that…

Back in the day I used to eat cottage cheese mixed with strawberries almost every morning.  It may sound weird, but I assure you the flavors pair extremely well together.  Unfortuately I’m unwilling to pay $6 for the small container of strawberries, especially since they’d only last a day around me.

This breakfast was almost as good but a heck of a lot cheaper!

Speaking of cheap, how much am I loving reasonable avocado prices lately?  SO MUCH.

Upon returning home from the airport on Sunday I realized I had absolutely nothing at home to bring for lunch the next day so we made a quick grocery store stop and picked up avocado, hummus and tomato then threw it all together in a wrap.

My lunch was smiling at me.

And I was smiling back once I took the first bite!

Roma tomatoes are quite delicious.  By the way during an intense game of Scene It Squabble (aka males vs. females) a couple weekends ago a question came up that had a list of words and you had to answer what they had in common.  Beefsteak, plum, brandywine… I will never forgive myself for not being the first to yell out “types of tomatoes!!”

The weather was B-E-A-utiful yesterday.  Blue skies and fall trees.

I may or may not have gone hog wild on the bulk aisle in WF after school.  And I may or may not have also run into none other than my sister while there.  Too funny!

I stopped home for a quick snack before heading off to yet another grocery store.

According to my mom this looks like it has beef in it.  I assure you it didn’t and that it was only plain Brown Cow yogurt with a new granola I bought (that I can’t remember the name of but it’s cinnamon-y, not too sweet and ever so slightly soft) and loved and a spoonful of pumpkin butter.

I mixed these together and it was nothing short of awesome.

After I got back from the store I got my lift on then headed over to the Dorsey household for Bean O’Clock!

**Although it appears that every meal eaten in the Dorsey household consists of food that is all the same color (and the same color as the table for that matter) I assure you it’s not and that it only appears so because of really bad kitchen lighting.  My apologies.**

Oh yes, these were good and I definitely had to go back for a little more.

Pie was later consumed.

I’m happy to report that I actually went to bed early and got a good 9+ hours of sleep so I’m feeling great today!

Tricks and Treats in Texas

We were there and back so fast I can hardly believe we were even in Texas this weekend!  I am totally off on my sleep schedule 😦

You may recall there was a little Halloween party attending on Friday night.

I was cheap and boring and borrowed a pair of Hannah’s scrubs.  I’m so over spending $$ on Halloween costumes.

The boys were lookin’ good!

The 2 am bed time made for a sleepy Saturday and the plane ride didn’t help either!

We picked up some lunch goodies at Whole Foods and ate them on the plane.

If only all chips had such a great inredient list.

I was on the prowl for Starbucks once we got to DIA.  I had a lot of reading to do on the plane and not a lot of energy.

Vanilla latte to the rescue!

Oh, and those tofu spring rolls turned out to be a disaster.  Talk about messy!

Once we got to Dallas and got our car, which was totally cool by the way, we checked into our hotel and called Spiral Diner for directions.

We started with hummus.  I was feeling light headed and needed food FAST.

Joey was surprised when I ordered a BBQ sandwich but the description sounded awesome and I really wanted to try seitan.  Just for the record, it is the most meat-like meatless thing I’ve ever tasted!!  I couldn’t believe this wasn’t pulled pork!

For a potato salad without mayo this was phenomenal.

Joey got the “Ate Layer Burrito,” which I was unimpressed with but then again I HATE taco seasoning.  Blehhh.  I assure you Joey enjoyed it though and the pasta salad was pretty tasty 🙂

Joey finished out the meal with his two favorite things: ice cream and beer.

I wanted to take a piece of this cake home but I was SO FULL.  I felt like I had just eaten Thanksgiving dinner and I didn’t foresee myself having room for any more food for the rest of the night.

Day 2 in Dallas presented lots of food related problems.  Honestly, I did not plan this trip very well.  I know I’m picky so I don’t know why I thought we could just wing it.  After realizing the continental breakfast at our hotel consisted of apple juice and fruit loops and with only half an hour till we had to be on the shuttle to the Cowboys game we drove all around looking for a Starbucks (because I knew I could at least get oatmeal really quickly there!) and FINALLY found one in a neighborhood nearby.  Phewww.

I ordered a tall coffee and got this.

I didn’t drink it all or I would have been a jittery mess all day.

Oatmeal + banana, brown sugar, dried fruit and an encouraging note.

I wish I could say the Cowboys Stadium was more accomodating for my meat disliking, veggie loving, real food needing diet but it definitely was not!  The meatless options were minimal 😦  One menu had chicken and beef fajita tacos so I asked if I could get them with extra veggies and no meat to which they responded that the only veggie was lettuce.  Then what makes them FAJITA tacos??

Anyways I ended up with a cheese pizza that I was none too happy with.

But then I realized I could have been eating worse things.  Like, say, a Frito Pie…

The Cowboys ended up getting beat pretty bad.  Good thing I don’t care a thing about football.

I may have left my phone at a bar we were sitting outside of while waiting for the shuttle back to the hotel…

I blame a lack of sleep.

Luckily, whoever found it contacted me and said they’d leave it at a Chili’s nearby.  Once again, phewww.

It’s good to be back in Colorado and eating real food!!
