Watered Down

Water played a large role in my day yesterday.

First and foremost, it ruined my phone.

When I get out of bed in the morning I grab my phone and carry it on top of my glass of water.  Today when I set that glass of water down on the bathroom counter my phone fell right in!  Needless to say, my phone is no longer working.  Good thing I have insurance, huh?

Water also played a role in my morning oats.  I usually wake up on Monday mornings and don’t eat till I get to work.  It’s hard.  Really hard.  This morning I decided to get to bed early and wake up 15 minutes earlier than usual all in the name of eating breakfast before leaving for work.

To make the process faster I cooked my oats on Sunday night and stuck them in the fridge then in the morning I added some water and microwaved them for a couple minutes.  Then topped as usual and ate in the dark.  Does anyone else share my opinion that if the sun isn’t up yet you shouldn’t be either?

Graham crackers were packed as a mid-morning snack.

Not to brag but Joey is right, this is my best batch.  Okay, I’m totally bragging and not ashamed to do so!

These held me over till lunch time.

Tortilla soup that Joey made at the end of last week.  I added some water so I could have more.

I got a nice 5 mile run in after school.  I bundled up with a sweatshirt and gloves and of course I’m still rocking the bondi-band as an earwarmer.

48:59 and I was back home feeling great!

It’s Monday so you know what that means.  Bean O’Clock.  I’ll spare you another picture of the beans.

More importantly: dessert!

Did you know I own this book?  I forgot until my Mom uncovered it a few weeks ago.  We owe dessert to this book.

There’s a recipe called “Death by Peanut Butter.”  WHY didn’t I name my blog that?!

Anyways, back to dessert.  Peanut Butter Bread Pudding.

That’s Dark Chocolate Dreams in there.  Talk about rich and delicious peanut butter!

Crabby Foodie

If I said I’ve been in a good mood all weekend I’d be lying.  It’s almost the end of the semester so I’m officially stressed.  I don’t deal well with stress.  Instead I tend to let it turn me into a total crab.

Lucky for you all food makes me happy so hopefully you won’t notice my crankiness.  Joey, on the other hand, isn’t so lucky.

Sunday morning family breakfast was delicious.

Clearly The Cowboys were playing.  Also notice that Joey is A) Drinking vegan hot chocolate, aka warmed up chocolate almond milk.  I had a taste, it was great. And B) He has already cleared his plate and I have yet to sit down to eat.

Aebelskivers = New Sunday Breakfast Craze.

I think I had 4 and ate my weight in fruit.

This weeks aebelskivers were banana fritter flavor.  I was very excited to hear this!  I’ve always LOVED my mom’s banana fritter pancakes.  She actually made them for me the morning I left to go to college in Fort Collins.  Yes, Mom I remember this.

Also on the plate were scrambled eggs topped with avocado but I wasn’t really into them.  Obviously I was more into the fruit and pancake puffs!

My afternoon was spent writing a paper.  Is it just me or do I seem to say that a lot?  Around 2:30 I broke for lunch.

I’ve had Heidi’s Curried Nooddle Patties recipe bookmarked for months and it was about time we actually tried it.

The only problem was we don’t have egg rings or biscuit cutters so I decided to make the patties mini by cooking them in a muffin pan in the oven.  I baked them on 350* for ~17 minutes (no flipping like in the original recipe).  They came out more like nests than patties but I thought they were pretty darn cute.  Cleaning the muffin pan out was not so amusing, however.

I wasn’t exactly wowed but they did the trick and we have lots of leftovers so I figured I’d use some more up with lunch.

Over a bed of spinach + drizzle of balsamic and a dash of salt.

I also whipped up a batch of my favorite graham crackers.

Secret ingredient was Pumpkin Pie Spice instead of plain old cinnamon.

Unfortunately, I couldn’t tell the difference 😦  BUT they still taste AWESOME.  I needed snacking materials on hand and although nuts do a pretty good job they’re just too expensive, especially at the rate I go through them.  Hopefully these grahams fix that problem 🙂

Joey deemed this my “best batch yet!”  Comments like this put me in a little bit better mood 🙂

I did manage to get to the work out room to do some eliptical-ing.  I did a 45 minute interval workout and felt so wonderful afterwards.  Never underestimate how much a workout can lift your spirits!

Came home and did my abs/arms workout for the day.  30 push ups and 70 sits up, wooo!

Dinner was Italian Wedding Soup (recipe from Mama Pea). 

Evening sunlight is sorely missed.

4 servings definitely turned out to be two servings.  If I make this again I’ll probably add a few cups of water to thin it out and so it evens out to more than two servings. 

We have sooo many “meatballs” left over.

After empyting our bowls Joey and I turned to each other and said “so full!”  We must have liked it.

Another Monday.  Don’t let it get you down!
