Chocolate, Peanut Butter, Finals
I sat home on Friday night and studied while everyone else went to trivia. They obviously did horrible without me 😛
I was determined to have some of fun of my own so I woke up and made chocolate oats. What, that’s not your idea of fun?
I doubled my usual portions so we had oatmeal for two.
This was the same amount of oats I make every time I make oatmeal for two but for some reason this batch looked like it was going to explode out of the pot!
I also made some tea with caffeine because I was preparing for a long long day of studying.
My dad gave me this tea and somehow it’s lasted over a year despite the fact that I feel like I drink it all the time.
Then I got to oatmeal topping.
Brown sugar and extra chocolate almond milk for him.
Dark chocolate almond granola (from Cascadian Farms) and maple syrup for her.
I could hear Joey’s spoon hitting his bowl for a full 15 minutes after I’d finished and when I went into our room to see if he was alive he gave me the bowl with oatmeal still in it and said he was done. Okay, so maybe I put a little more in his bowl than mine, but still.
At 1 I preheated the oven because I needed these.
Why yes, those are gobs of peanut butter.
I microwaved my sweet potato for 3 minutes to speed up the baking process. I only had to bake them for 40 minutes.
Nice and crispy with an AMAZING taste. But then again what doesn’t taste good when it’s covered in that much peanut butter.
With some goat cheese and jelly on toast. Don’t knock it till you try it, my friends.
We cranked the Christmas tunes while we ate lunch.
What to do when you have a lot of studying to do but want to get your exercise on too? Take your notes to the gym and bike and study at the same time!
I did an interval work out and finished studying, it worked out great.
My final was at 7:30 pm so I ate some stew (pictures to come) before I left at 6:30 and packed some dried apricots and cashews in my jar so I could shove them in my mouth as soon as my final was over and believe me, I did just that.
Now we’re watching Love Actually.
Funny story:
The other day Joey said to me “you know, that English guy from Love Actually.” If you don’t understand why that’s funny you should know that Love Actually is set in England and all the men in the movie are English!
Now he’s telling me a story about someone doing a Harry Potter accent, which I believe it also referred to as an English accent.
Well, my final is over with, my papers are turned in, classes are over with and I have some Christmas movie watching to enjoy and some hot chocolate to make 😀
The New Peanut Butter and Jelly
Another go with the chocolate oats.
In the mix:
- 1/3 cup oats
- 1.5T homemade Scottish oats
- 1 cup water
- 1/2 cup chocolate almond milk
- 1t ground flax
- 1t cocoa powder
Topped with:
- pumpkin granola
- peanut butter
- 1/2 a banana
Yes, I’m still loving this bowl. Both because it’s Christmas-y and because it’s smaller than my regular bowls and makes me feel like I have more oatmeal.
If you’re going to make chocolate oats I definitely recommend adding sugar, honey or maple syrup. The cocoa kind of mutes the sweetness of the milk.
I drank coffee with my oats this morning and was seriously sweating. It was gross. Never again!
Then I made lunch. It’d been a while since I made a sandwich (or it felt like it anyways) and I decided it was time.
What to do when you’ve already had enough peanut butter via morning oats? Make a jelly and goat cheese sandwich!
And throw some spinach in for fun.

When I got home I enjoyed a green monster in the dwindling daylight.
Then I stretched (in an attempt to avoid ITBS-related knee pain) and ran 3 miles to decompress.
In the past two days, I turned in two papers and a journal consisting of a written page for every class and every reading we did and gave a presentation. I needed a good run.
I’m spending the ENTIRE day studing for my 7:30 PM final. Yes, University of Colorado has finals on Saturday. It’s unfair if you ask me.

Switching It Up
I wasn’t feeling oats yesterday morning. Shocking, I know.
I wanted to try something new, plus I’ve been wanting to try these two things for A WHILE.
First, grilled bananas.
I left them on a little longer than I meant to and thought they were burnt but it turns out those “burnt” sections tasted like caramelized brown sugar and I’m definitely okay with that!
Next up, Ashley’s vegan pumpkin French toast. I momentarily freaked when I first saw this recipe because it looked so so good but I almost always wake up craving oats and when that craving comes it must be satisfied.
When said craving didn’t surface this morning I knew it was time.
Topped with grilled banana slices. OH.MY.GOODNESS.
THIS WAS SO GOOD!!
I also drizzled on 1/2T of maple syrup for some sweetness. I go through syrup wayyy to fast.
If I hadn’t used the last 1.5 English muffins I would have repeated this breakfast this morning. 😦
Lunch was leftover potato soup made Wednesday night by Joey.
I wasn’t there for the soup making process but I’m pretty sure you blend most of the potatoes up into the soup then add a few un-blended chunks. I thought it was the perfect blend (no pun intended) of creamy and chunky.
Some unpictured carrots accompanied the soup. Does anyone else see a smiling face in this bowl?
I ate lunch much earlier than I normally do on Thursdays and I’m usually already pushing it between lunch and dinner (I’m always STARVING) so I grabbed a snack from the little cafe/store inside the student center.
I’ve never heard of Mrs. May’s Trio before but this bar had a solid ingredient list — 3 nuts, 3 fruits, 3 seeds, just like it says — so I was sold.
I turned out to be a lot crunchier/harder than I’d expected but as it turned out that was one of my favorite parts about the bar. The flavors were great!
One last thing, I completed day 2 of week 4 on my arms and abs challenge — 70 something push ups and 172 sit ups I believe. It’s getting so hard!
