Carrots before Christmas
I asked Joey to get some carrots at the grocery.
He returned with this bag.
That’s right, 5 pounds of carrots.
In an effort to use of some of those carrots I thought I’d try out Angela’s carrot cake oats recipe, slightly modified.
Carrot Cake Oats for One (modified from here):
Ingredients:
- 1 cup water
- 1/2 cup almond milk
- 1/2t lemon juice
- 1T coconut cream (the cream off the top of the full fat can of coconut milk), divided
- 1t pumpkin pie spice
- dash of salt
- 1/2 cup oats
- 1/2 cup finely grated carrot
- 1/2t vanilla
- 1T crunchy topping of your choice (walnuts, pecans, peanuts, almonds, granola, whatever you’d like)
- 1T maple syrup, divided
Directions:
- Add water, almond milk, lemon juice and 1/2T coconut cream to a pot over medium heat. Stir.
- Add pumpkin pie spice and salt. Stir.
- Add oats and carrot. Cook 10 minutes or until thickened.
- Once thick, add vanilla and 1/2T maple syrup.
- Mix 1/2T maple syrup and 1/2T coconut cream together in a small bowl. Drizzle over oats with crunchy topping of your choice.
It looked a little scary at first but the end result was quite lovely (and orange!) looking.
Considering I’ve never had carrot cake I don’t think I’m qualified to say whether or not this oatmeal tasted like the real stuff but I do know I enjoyed this bowl.
Nothing like getting in 1/2 cup of carrots before 9 AM.
After breakfast I got going on some Christmas cooking but I’ll spare you yet another picture of green bean casserole. There was a slight sweet potato fiasco. Not only did the grocery only have Jersey sweet potatoes (which are white!) but while peeling them I kept coming across mushy spots and finally I just tossed the whole bag of them 😦
Stress has officially set in.
Oh well, I took a breath, made some hot chai and took out my frustration on some wrapping paper.
Then I dashed out to do some last minute shopping (oops!) and returned for some lunch.
Hello, Big Salad (Seinfeld, anyone?)
In the mix:
- mixed greens
- honeycrisp apple
- dried cranberries
- goat cheese
- roasted chickpeas
- dressing (balsamic, apple cider vinegar, honey, salt, pepper)
Piled high.
I may have finished off lunch with a cookie (or two).
Hoping to hit the gym for a run but we’ll see how the day pans out.
By the way, did I mention I had some excellent butternut squash ravioli at Venice last night?
Blogger Confession:
I sometimes take pictures of the meals I plan on eating for dinner during the day so I can take advantage of the day time. So no, I haven’t actually eaten this meal yet but I plan on eating it tonight!
Back to the ravioli.
Check out the sage leaves. I’m not entirely sure what they’re coated in but they were crisp! Joey and I couldn’t decide if they were tasty or just weird. I’ll have another chance to decide tonight.
The raviolis themselves were awesome but between the ravioli, the bread and the appetizers I had a lot of food on my plate (literally) so I only made it halfway through my entree.
I’m off to finish my to do list and I’m hoping to watch Joey bowl tonight 😀

Winter Magic
I had one of those magical days filled with shopping, eating and enjoying yesterday.
Sighhhh.
It started with a super simple bowl of oats because A) I was in a hurry and B) I woke up with zero appetite.
Banana whipped oats with 1/3 cup oats & 1/3 of a banana.
Topped with homemade peanut butter and dried cranberries.
And with breakfast finished I was off to meet my mom and sister at their place. Then we headed to Starbucks and hit the road.
I attempted to take a picture of myself drinking my grande soy caramel brulee latte. I almost got my entire head in the picture.
Guess where we went.
The Coach Outlet, of course. AND the 30% off deal was still going on. The outlet has such good prices that it becomes really difficult to pick just one bag.
See what I mean?
There’s at least 6 bags in this picture. They finally narrowed it down to one each and left happy with their decisions 🙂
Obviously, we stopped at our favorite lunch spot before heading home.
Uddiiii’s. I think you can already guess what I got.
But I did change it up and got some tortilla soup on the side. It was pretty darn good and I ate every bite of the soup and the sandwich, the other half of which was eaten by Beanie.
I knew I needed a good hearty lunch because we weren’t eating dinner till much later. And all because we had a show to attend!
Trans Siberian Orchestra!
It was quite the show.
It was more like a rock concert than an orchestra concert, if you ask me.
And lots of cool lights and Christmas songs.
After the show we had dinner at Venice which has a lovely view of the train station across the street.
It was one of those long slow dinners where everyone just takes their time and enjoys themselves (I hope I’m not just speaking for myself) and while the food was delicious, I think the company and conversation was better 🙂
I’m ready to sink into a coma of holiday happiness and get a good night’s sleep.

Sights of the Season
Make that sights, smells, sounds and eats of the season.
Such has filled my days and nights lately.
A group of us gathered in a mini van last night to partake in some holiday light seeing. It’s a tradition!

There were some really good houses this year (in my opinion anyway) and I think we all enjoyed the house whose lights blinked to the rhythm of the songs playing on their own radio station!
Some of my mom’s cocoon cookies were enjoyed along the way.
Mmmm buttttter.
Before we left, Joey and I enjoyed some pre-Christmas stuffing.
It was good, but it didn’t hold a candle to my mom’s stuffing. Luckily, I get to eat some of hers on Saturday!!
Joey was pumped when I pulled out the sausage to add to the stuffing. I didn’t tell him that it was non-meat sausage until after we ate it. Clearly, he had no idea.
Once we got home from our drive I made some tea and hopped into bed. An hour and a half later I was awake again, and ready to see some lunar eclipse!
I got a really good picture.
You mean you can’t see that? It’s obviously right there!
Wish I had had some binoculars. And maybe 7 more layers of clothes.
Tuesday morning started with a freezing 3 mile run in 28ish minutes followed by a hot shower, hot tea and of course, hot oats.
Pumpkin pie oats are dear to my heart.
In the mix:
- 1/2 cup oats
- 1/2 cup almond milk
- 1 cup water
- 1/2T ground flax
- 1/2 cup pumpkin
- 1t pumpkin pie spice
- splash of cinnamon
Topped with:
- pumpkin granola
- Earth Balance (loved the kick of salt)
- maple syrup
- almond milk
And two bites in I had to return to the kitchen to add some peanut butter.
Lunch involved leftovers and salad.
Salad topped with stuffing and dried cranberries plus some balsamic and honey.
We’ll see how this salad ranks among the many I’ve eaten recently. Yesterday’s was DARN GOOD.
