Isn’t Life Wonderful?

As you may have guess, I’m in excellent spirits today.  Probably because I had a wonderful weekend.

Dinner with friends, yoga with my favorite teacher, cooking, baking, and my hair went from this…

To this…

Much better, don’t you think?

I’ve also been chowing down on Smore Oats all weekend too.

So good.  And that reminds me that I need to make some more cinnamon toast crackers.  The “cheese” variety were gone the day after I made them.  And that happened without any help from Joey.

I love when I have time on Saturday to do my grocery shopping — it makes my Sundays so much less hectic!

Joey and I went to dinner at his aunt and uncle’s to celebrate the February/March birthdays in his family (yeah, he has a big family and birthdays have to be celebrated in bulk), so we opted our planned Sunday dinner meal for lunch instead.  For some reason, cooking lunch just seems more fun than cooking dinner.

We made OSG’s Falafel Burgers and I thought they were really really good.  Like one of my favorite bean burgers ever.

I think the key was the sunflower seeds.  That crunch is so nice, plus I’m a big fan of anything that tastes like hummus and these did.

Baked > stove-cooked.

Check out that ricehgolden color.

Served with a pile of kale chips and some sweet potato fries.  And the most important pile of all: ketchup.

I have granola cooling in the kitchen and it smells so good in this apartment.  Recipes and picture to come!

Back into the Spring of Things

I’m sure Colorado still has a few winter storms up its sleeve and while today wasn’t particularly warm, I did break out my sandals (and my astonishingly white feet) earlier in the week and I can smell Spring.  It’s right around the corner.

How do I know?

Well besides the flip flop appropriate weather I also saw the return of plated oats this week.  This can only mean warm weather is fast approaching. 

Method behind the madness: more surface area = cooler oats.  AKA I’m not sweating while eating them plus they cool faster this way, which is key for an oatmeal enthusiast like myself.

Only problem…

I forgot your oats can’t be runny if they’re going on a plate or you run the risk of having them overflow off the sides!

Toppings were on point, however.

Oh and my race itch is in full force.  I’ve been looking up upcoming half marathons and think I’m pretty decided on the Taste of Louisville Half in early June.

Someone please tell me to hit the register button already!

How about Spring colored foods?  Yes, puprle is totally a Spring color.  Because I say it is.

I was a little to excited when I found purple potatoes at the grocery.

Gorgeous, no?

Note to self: make sure your goat cheese is good before crumbling it all over your salad.  This will save you the trouble of having to pick it out later bit by bit.

And not that this has anything to do with Spring but I ate a new oat combination this morning that I’m referring to as Smore Oats — “you want a smore? smore of what?” <— Name that movie.

Basically I just added chocolate chips and cinnamon sugar crackers.  Simple but extremely delicious.  Chocolate is allowed for breakfast, especially on Fridays.

I think some coconut butter would have taken this to the next level!

I’m off to get my hair cut in Boulder.  Anticipate a grocery shopping post sometime soon!!

I could pretend I’ve been wanting to do this blog survey all along, but let’s be honest…

Lack of interesting bloggie material = fill in the day with a blog survey

A. Age: 21 — I’m just a baby, I know

B. Bed size: Queen and I actually happen to think it’s the perfect size… until the dog ends up in bed with us, then it seems way.too.small.

C. Chore you dislike: folding and putting away laundry, emptying the dishwasher, taking out the trash, cleaning the bathroom.  Okay, so I dislike all chores… except grocery shopping, especially grocery shopping with someone else’s credit card.

D. Dogs: I’m trying to ignore the fact that Tonka is now living with us, but this question makes it hard to do so.

I’ve re-named him “Devil Dog” for obvious reasons…

E. Essential start to your day: a glass of water and a good breakfast — oatmeal if preferable but anything involving peanut butter works too 🙂

F. Favorite color: I honestly hate this question, but I guess if I had to pick it would be pink — hot pink!

As evidenced by my room when I lived at home…

G. Gold or silver: If this question was referring to dance competition medals I would say neither — it’s all about the platinum (or so I heard because my dance team certainly wasn’t getting any).  Since it’s not I’m going to say silver.

H. Height: 5’3″ — thanks, Mom.

I. Instruments you play(ed): Does the recorder count?  No?  Good, because I was horrible at that too.  I dream of a day when I will own a harp and perform during dinner parties.

J. Job title: Student… I won’t be able to say that for much longer…

K. Kids: Far far down the road.  I sometimes think I still need a babysitter.

L. Live: Broomfield, CO but of how I wish I lived in New Orleans.

M. Mom’s name: Sheila

N. Nicknames: Sis, L-Dog (okay, only Joey calls me that), still trying to get the Lady Dorsey thing to catch on.

P. Pet peeves: any kind of eating-related noises, when people spell too wrong, anything Joey does when I’m hungry

T. Time you wake up: Between 7:30 and 8:30 and yes, I know that’s late in the real world but I’m in college for another couple of months!

V. Vegetables you dont’ like: I clearly don’t have a problem with any vegetables, as proven by my nutrition class project.

W. What makes you run late: I usually don’t run late but if I do it’s because I’m trying to pack all my food into my bag!

X. X-rays you’ve had: Teeth (side note: I was awake when I got my wisdom teeth out, anyone else?), Arm which I broke by falling and landing on it (I still have the cast — gross?), MRI on my knee (tore my miniscus and had to have surgery).

Z. Zoo animal favorites: I despise the zoo.  I can only spend so much time looking at monkeys, people but I guess I’m partial to seals and polar bears.
