Day 3: Chocolate Peanut Butter Pillows

Technically, today’s cookie is a vegan one.

But I would just tell you it’s a chocolate peanut butter cookie.

And my mom would tell you it’s “SO GOOD!”  Actually her eyes, as she took a bite, would tell you that, but she would confirm it in words afterwards.

She’s right.  They’re incredible.  So let’s not get hung up on technicalities, okay?

Vegan cookies can be temperamental.  Sometimes they’re flat, sometimes they burn and sometimes they taste like they’re missing something.  Like butter.

These are none of the above. 

They’re easy.

They’re anything but flat.

And they’re not for the faint of heart.

IMG_3495 That’s a chocolatey peanut butterific mound if I’ve ever seen one.

And the only butter they need is of the peanut variety.

I’d like to eat about 12 of these, which is convenient because that’s exactly how many I made.

Too bad I already gave one away to my mom.

If you had to choose one, would it be chocolate or peanut butter? Now breathe a sigh of relief, that you don’t actually have to choose.  Especially if you make these cookies 🙂

    I have just decided that I need to purchase some stretchy pants. Who cares how maw-mawish I will look, after seeing and wanting all of your cookies—-I have a feeling I may need them.

      Just pawn half off on your coworkers, friends and family that way you don’t end up eating them all. That’s my tactic 😛

    I made these once and I agree- they are amazing. Even my anti-vegetarian-vegan-healthy food extended family loved them!

    YUM, these look so good and right up my hubby’s ally (PB & chocolate is his favorite)–I’ll definitely be trying these soon! The fact that they’re vegan is just an added bonus! 🙂 If the world was coming to an end, I think I would have to choose chocolate…but that is a veerryyy tough choice!

    If I HAD to choose one, I’d have to go with my long-time lover, peanut butter. And I have the cookie cookbook this recipe is in, but it looked so technical that I avoided it. Good to know these are easy! Might have to make them for the office and wow them with my cookie skills (and not mention ’til later that they’re vegan ;D )

      The rolling is a little time consuming. But nothing major. In other words, go for it!

    I wouldn’t have guessed they are vegan! Interesting. I may just have to try ’em out.

    And actually your question is quite easy my dear: peanut butter all the way.

    Keep your eye out for a package. My guess is should arrive by Saturday 🙂
