French Toast on Friday

Yesterday was a longggg day.  So long in fact that I couldn’t muster the energy to take many pictures.  And by many I mean I think I took a total of 2, oops!

Allow me to explain…

Wednesday night:  Doze off several times on the way home from Red Rocks.  Don’t worry I was NOT driving 😛  Finally crash into bed around 1 AM

Thursday morning:  Wake up at 6:30 with enough time to get ready, pack a lunch, and stop at Starbucks.  I have no idea how I fit this all in!

Here’s where the 2 pictures come in:

Thursday afternoon:  Proceed to work four hours, go to class for three, go back to work for 3 more hours.  Thank you caffeine!

Thursday night:  Miss the bus home and have to wait 3o more minutes for the next one 😦  Call mom who is ordering Chinese and force her to order me some and allow me to come eat it at her place.  PERFECT END TO THE LONG DAY, however I was much too hungry to spend any amount of time taking pictures and just dug in instead.

So far, today has been a fairly normally lengthed day, except that oats were once again missing on the breakfast menu

Feast your eyes upon Vegan French Toast

  • Mash one banana until it thins out
  • Add ~3T almond milk, vanilla, cinnamon, chia seeds
  • Coat bread with mixture
  • Cook in coated pan as you would normal french toast

I topped mine with a few extra banana slices, strawberries and a drizzle of maple syrup.  Oh, and I may have spread some peanut butter between the slices as well.  A girl needs her PB in the morning!

Of course I had Chinese leftover for lunch… duh

But I changed it up a little.  Got rid of the chicken part of my chicken and broccoli (there was SO much), steamed some carrots, squash and red bell pepper, then tossed the veggies in with the broccoli, rice and sauce.

I love the pop of color the extra veggies gave to the dish!

Ahhh, nothing better than Chinese leftovers 🙂 

On another note, here are the running time I promised wayyy back at the beginning of the week…

7 Miler:

  • 10:09

  • Total = 1:10:09

4.5 Miler:

  • 9:57
  • 9:15
  • 9:41
  • 9:34
  • 4:43 (9:23 pace)
  • Total = 43:13

I also did a short and sweet 2 miler on Wednesday and am proud to report that my second mile was an 8:25!!!  Say what?!

I’m slowly learning how to pace myself based on my distance 🙂

I’m not off to consume my new favorite afternoon snack, aka cereal.
